Aloo Tamatar Dry | Potato Tomato Dry

Such a colorful and delicious recipe yet easy and quick to prepare. It is prepared with potatoes, onions and tomatoes.

Ingredients:

  1. Potatoes – 2 medium (peeled and cut into small cubes)
  2. Onion – 1 medium (finely chopped)
  3. Tomato – 1 large ( finely chopped)
  4. Ginger – 1 inch (finely chopped)
  5. Green Chilli – 1 (finely chopped)
  6. Cumin Seeds – 1 tsp
  7. Asafoetida – a large pinch
  8. Coriander Powder – 1 tsp
  9. Turmeric Powder – 1/3 tsp
  10. Red Chilli Powder – 1/3 tsp
  11. Garam Masala Powder – 1/3 tsp
  12. Coriander Leaves – for garnishing
  13. Oil – 2 tbsp
  14. Salt to taste.

How to make Aloo Tamatar Dry:

  1. Heat oil in a pan or a kadai. Add cumin seeds and asafoetida. Let it splutter
  2. Add onions, ginger and green chillies. Saute till onions are translucent
  3. Add potatoes and spices – turmeric powder, coriander powder, red chilli powder and salt. Mix well
  4. Cover and cook on low flame till potatoes are 90% cooked. Stir occasionally
  5. Add chopped tomatoes. Mix
  6. Cover and cook for 4-5 mins on low flame. Potatoes will also be cooked completely
  7. Remove the cover. Mix tomatoes (they must be a little mushy now). Add garam masala powder. Mix well
  8. Cook on high flame for 2-3 mins so that excess moisture is absorbed
  9. Your Aloo Tamatar Dry is ready. Add coriander leaves and mix
  10. Serve hot with Phulkas or Parathas.
