Aloo Tamatar Dry

An easy and quick recipe yet delicious. Perfect for packing up a quick-lunch.

Ingredients:

  1. Potatoes – 2 medium (peeled and cut in cubes)
  2. Onion – 1 medium (finely chopped)
  3. Tomato – 1 large ( finely chopped)
  4. Ginger – 1 inch (finely chopped)
  5. Green Chilli – 1 (finely chopped)
  6. Cumin Seeds – 1 tsp
  7. Asafoetida – 1/5 tsp
  8. Coriander Powder – 1 tsp
  9. Turmeric Powder – 1/3 tsp
  10. Red Chilli Powder – 1/3 tsp
  11. Garam Masala Powder – 1/3 tsp
  12. Coriander Leaves – 2 tbsp (finely chopped)
  13. Oil – 2 tbsp
  14. Salt to taste

How to make Aloo Tamatar Dry:

  1. Heat oil in a pan or a kadai
  2. Add cumin seeds and asafoetida. Let it splutter
  3. Add onions. Saute
  4. Add ginger and green chillies. Saute for 2 mins
  5. Add potatoes and spices – turmeric powder, coriander powder, red chilli powder and garam masala powder. Mix well
  6. Cover and cook on low flame till potatoes are 90% cooked. Keep sautéing in between
  7. Make some space in the centre of the sabji with the help of a spoon and add tomatoes. Cover and cook for 5 mins
  8. Remove the cover. Mix tomatoes (they must be a little mushy now)
  9. Cook on high flame for 2-3 mins so that excess moisture is absorbed
  10. Your Aloo Tamatar Dry is ready
  11. Add coriander leaves and serve hot with Phulkas or Parathas.
