Vegetable Rice

When the refrigerator is loaded with veggies then such ideas pop up in your mind. I almost added all the veggies available. You can even add vegetables of your choice to it and replace the white rice with the brown rice if you wish to make to it more healthy. Hope you enjoy the recipe.

Time: Preparation – 15 mins, Cooking –  20 mins, Total – 35 mins

Servings: 2-3


  1. White Rice – 2 cups (boiled)
  2. Sweet Corn – 1/3 cup (boiled)
  3. Potato – 1 medium (finely chopped)
  4. Onion – 1 medium (finely chopped)
  5. Capsicum – 1/3 cup (finely chopped)
  6. Carrot – 1/2 cup (grated)
  7. Tomato – 2 medium (finely chopped)
  8. Spinach – 100 grams (chopped)
  9. Green Chilli – 1 (finely chopped) (optional)
  10. Paneer (Cottage Cheese) – 1/2 cup (cut in small cubes)
  11. Black Pepper Powder – 1/2 tsp
  12. Cumin Powder – 1/2 tsp (optional)
  13. Oil – 2-3 tbsp
  14. Salt to taste

PS: 1 Cup = 250 ML

How to make Vegetable Rice:

  1. For cooking potatoes add 1 tsp oil in a pan. Add potatoes and salt
  2. Saute and cover. Cook till potatoes are soft. Keep aside
  3. Heat oil in a big pan or a kadai
  4. Add onions, capsicum and green chillies. Saute till onions are golden brown
  5. Add grated carrot. Cook for 2-3 mins on medium flame
  6. Add tomatoes. Cook for 1-2 mins
  7. Add spinach. Cook for 3-4 mins or until water from the spinach is absorbed
  8. Add boiled rice, paneer, sweet corn, cooked potatoes, cumin powder (optional), black pepper powder and salt
  9. Mix well and make sure rice doesn’t break much
  10. Your Vegetable Rice is ready. Serve hot!!!
