Aloo Pyaaz Kachori

Aloo Pyaaz Kachori is a famous Rajasthani snack. It is easily available at most of the fast food shops all across India. The stuffing for the kachoris is made out of onions and potatoes. The delicacy is enjoyed with Tamarind Chutney and Green Chutney.

Servings: 3-4


  1. Wheat Flour – 1/2 cup
  2. All Purpose Flour (Maida) – 1/2 cup
  3. Gram Flour – 1 tbsp
  4. Potato – 2 medium (boiled, peeled and mashed)
  5. Onion – 1 medium (finely chopped)
  6. Green Chilli – 1 (finely chopped)
  7. Ginger – 1 inch (finely chopped)
  8. Coriander Seeds – 1 tsp (crushed)
  9. Fennel Seeds – 1/2 tsp
  10. Black Cumin Seeds (Kalonji) – 1/2 tsp
  11. Turmeric Powder – 1/3 tsp
  12. Red Chilli Powder – 1/3 tsp
  13. Dry Mango Powder (Amchur) – 1/3 tsp
  14. Oil – for shallow frying the kachoris and cooking the filling
  15. Water – for the dough
  16. Salt to taste.

PS: 1 Cup = 250 ML

How to make Aloo Kachori:

  1. Take wheat flour and all-purpose flour in a bowl. Add 2 tbsp of oil and salt. Mix
  2. Add water as required and make a soft dough. Keep aside for 20 mins
  3. Heat 2 tbsp of oil in a pan. Add crushed coriander seeds, fennel seeds and black cumin seeds. Saute till you get the aroma, it will take 5-10 seconds
  4. Add ginger and green chilli. Saute for a minute. Add onions and cook till onions are translucent
  5. Add gram flour, red chilli powder and turmeric powder. Mix
  6. Add potatoes and salt. Mix well. Cook for 4-5 mins on medium flame
  7. Add dry mango powder. Mix well and turn off the flame. Keep aside the filling
  8. Take the dough and knead it once more. Divide the dough into equal sized balls
  9. Take a dough ball and pour a few drops of oil. Roll it into a circle of 3 inch diameter
  10. Place around 1 to 2 tbsp of filling in the centre. Bring together all the sides and seal it well
  11. Now dip your fingers in a little oil and press the kachori from the centre and make a circle of around 2 – 2 1/2 inch diameter. Similarly repeat it for rest of the kachoris
  12. Meanwhile heat enough oil to shallow fry the kachoris
  13. When oil is hot drop the kachori carefully
  14. Deep fry on medium flame from both the sides. Similarly repeat for rest of the kachoris
  15. Drain them on a kitchen paper towel
  16. Your Aloo Pyaaz Kachori is ready. Serve hot with Tamarind Chutney and Green Chutney.
