Sweet Corn Quinoa

I guess I am in love with sweet corn these days as I end up adding it to so many dishes, lol!!! We know quinoa is healthy and when sweet corn is added it becomes super dainty. Hope you relish this recipe!!!

Cuisine: Indian

Time: Preparation – 5 mins, Cooking – 20 mins, Total – 25 mins

Servings: 1-2

Ingredients:

  1. Quinoa – 1/2 cup (rinsed)
  2. Sweet Corn – 1/2 cup (boiled)
  3. Onion – 1 medium (finely chopped)
  4. Tomatoes – 1 medium (finely chopped)
  5. Ginger – 1 inch (crushed or grated)
  6. Garlic – 1 clove (crushed or grated)
  7. Green Chili – 1 (finely chopped)
  8. Cumin Seeds – 1/2 tsp
  9. Coriander Powder – 1 tsp
  10. Red Chili Powder – 1/3 tsp (optional)
  11. Lemon Juice – 2 tbsp
  12. Water – 1 cup
  13. Coriander Leaves – for garnishing
  14. Olive Oil – 3 tbsp (you can use any other oil as well)
  15. Salt to taste.

PS: 1 Cup = 250 ML

  1. Add water and quinoa in a saucepan. Bring it to boil. Cover and cook on low flame till water is absorbed and quinoa is soft
  2. While quinoa is boiling heat oil in a pan. Add cumin seeds and let it splutter
  3. Add onions. Saute. Add ginger, garlic and green chili. Saute till onions are golden brown
  4. Add tomatoes and spices – coriander powder and red chili powder. Mix and cook till oil starts to separate
  5. Add boiled sweet corn, quinoa and salt. Mix well and cook for 1-2 mins
  6. Turn off the flame. Add coriander leaves and lemon juice. Mix well
  7. Your Sweet Corn Quinoa is ready. Serve Hot.
