Cabbage Quinoa

Cabbage and quinoa, both are healthy and they make a pleasurable combination. This recipe is quite easy and super quick.

Time: Preparation – 5 mins, Cooking – 20 mins, Total – 25 mins

Servings: 1-2

Ingredients:

  1. Quinoa – 1/2 cup (rinsed)
  2. Cabbage – 1 cup (chopped)
  3. Onion – 1 medium (julienned)
  4. Ginger – 1 inch (crushed or grated)
  5. Garlic – 1 clove (crushed or grated)
  6. Green Chili – 1 (finely chopped)
  7. Cumin Seeds – 1/2 tsp
  8. Coriander Powder – 1 tsp
  9. Turmeric Powder – 1/3 tsp
  10. Lemon Juice – 2 tbsp
  11. Water – 1 cup
  12. Coriander Leaves – for garnishing
  13. Olive Oil – 3 tbsp
  14. Salt to taste.

PS: 1 Cup = 250 ML

  1. Add water and quinoa in a saucepan. Bring it to boil. Cover and cook on low flame till water is absorbed and quinoa is soft
  2. While quinoa is boiling heat oil in a pan. Add cumin seeds and let it splutter
  3. Add onions. Saute. Add ginger, garlic and green chili. Saute till onions are golden brown
  4. Add cabbage, coriander powder and turmeric powder. Mix and cook till cabbage is soft
  5. Add boiled quinoa and salt. Mix well and cook for 1-2 mins
  6. Turn off the flame. Add coriander leaves and lemon juice. Mix well
  7. Your Cabbage Quinoa is ready. Enjoy.
