Stuffed Pasta Shells

Stuffed Pasta Shells can be prepared in many ways. I have used sweet corn stuffing along with tomatoes, onions and a bit of capsicum. You can add more veggies of your choice. Recipe is very simple and easy.

  1. Jumbo Pasta Shells – 10
  2. Sweet Corn – 1/2 cup (boiled)
  3. Onion – 1 medium (finely chopped)
  4. Tomato – 3 medium (puree)
  5. Capsicum – 1/4 cup (finely chopped)
  6. Garlic – 2-3 cloves (crushed)
  7. Coriander Leaves – 1/4 cup (finely chopped)
  8. Red Chilli Flakes – 1/2 tsp
  9. Black Pepper Powder – 1/4 tsp
  10. Dried Basil Leaves – 1 tsp
  11. Oil – 2 tbsp
  12. Water – to cook pasta
  13. Salt to taste.

PS: 1 Cup = 250 ML

How to make Red Sauce Pasta:

  1. Boil pasta shells as per the instructions on the pack
  2. While pasta shells are cooking, heat oil in a pan. Add onions and garlic. Saute
  3. Add capsicum and cook till onions are translucent
  4. Add tomatoes. Cook till oil starts to separate
  5. Add sweet corn, red chilli flakes, black pepper powder, dried basil leaves, coriander leaves and salt. Mix well and cook for a minute. Turn off the flame and keep aside the filling
  6. Strain the pasta and stuff it with the filling
  7. Your Stuffed Pasta Shells are ready. Garnish with coriander leaves and chili flakes.
