Lemon Quinoa

This is an effortless recipe of quinoa, you’ll need quinoa, onions, garlic and lemon. The lemony flavor is unbeatable with quinoa.

Ingredients:

  1. Quinoa – 1/2 cup
  2. Julienned Onion – 1 medium
  3. Grated Garlic – 2 cloves
  4. Lemon Zest – 1 tbsp
  5. Cumin Powder – 1/2 tsp
  6. Turmeric Powder – 1/4 tsp
  7. Chilli Flakes – 1/2 tsp
  8. Lemon Juice – 2 tbsp
  9. Water – 1 cup
  10. Coriander Leaves for garnishing
  11. Olive Oil – 1.5 tbsp
  12. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Lemon Quinoa:

  1. Thoroughly rinse the quinoa and add to a saucepan along with the water. Bring it to boil, then cook covered on a low flame until water is completely absorbed and quinoa is soft
  2. Meanwhile heat oil in a pan. Add garlic and onions, saute until onions are golden brown
  3. Add lemon zest, cumin powder, turmeric powder and chilli flakes. Mix and cook for a few secs
  4. Add cooked quinoa and salt. Mix and cook for 1-2 mins
  5. Turn off the flame, add coriander leaves and lemon juice. Mix well and your Lemon Quinoa is ready.
