Ingredients:
- Roma or Plum Tomatoes – 5 (roughly chopped)
- Medium Onion – 1 (peeled and roughly chopped)
- Red Bell Pepper – 1 (seeded and roughly chopped)
- Garlic Cloves – 2-3
- Ground Pepper – 1 tsp
- Dried Basil – 1/2 tsp
- Oregano – 1/2 tsp
- Water – 1 cup or as needed
- Salt to taste + Sea Salt to sprinkle on top while baking
- Oil to drizzle while baking.
PS: 1 Cup = 250 ML.
How to make Roasted Tomato and Pepper Soup:
- Pre-heat the oven to 400 F. Line a baking sheet with parchment paper and place the tomatoes, onions, garlic and bell pepper. Drizzle some oil and sprinkle some sea salt or regular salt. Bake for 40 mins
- Let it cool down and add it to a blender, blend to make a smooth paste
- Transfer to a saucepan, add water, salt, oregano, dried basil and ground pepper. Bring it to a boil and simmer for 5 mins
- Your Roasted Tomato and Pepper Soup is ready. Serve warm or hot with some grilled cheese and enjoy!!!
