Roasted Tomato and Pepper Soup

An easy recipe for a flavourful, creamy and comforting soup. It is roasted tomato and pepper soup, which is perfect for winters. Do try!!!

Servings: 2

Ingredients:

  1. Roma or Plum Tomatoes – 5 (roughly chopped)
  2. Medium Onion – 1 (peeled and roughly chopped)
  3. Red Bell Pepper – 1 (seeded and roughly chopped)
  4. Garlic Cloves – 2-3
  5. Ground Pepper – 1 tsp
  6. Dried Basil – 1/2 tsp
  7. Oregano – 1/2 tsp
  8. Water – 1 cup or as needed
  9. Salt to taste + Sea Salt to sprinkle on top while baking
  10. Oil to drizzle while baking.

PS: 1 Cup = 250 ML.

How to make Roasted Tomato and Pepper Soup:

  1. Pre-heat the oven to 400 F. Line a baking sheet with parchment paper and place the tomatoes, onions, garlic and bell pepper. Drizzle some oil and sprinkle some sea salt or regular salt. Bake for 40 mins
  2. Let it cool down and add it to a blender, blend to make a smooth paste
  3. Transfer to a saucepan, add water, salt, oregano, dried basil and ground pepper. Bring it to a boil and simmer for 5 mins
  4. Your Roasted Tomato and Pepper Soup is ready. Serve warm or hot with some grilled cheese and enjoy!!!
