Paneer Hyderabadi

Paneer (Indian Cottage Cheese) cooked in lush green gravy made with spinach, coriander and mint leaves along with onions, green chilli, ginger, garlic and spices. Enjoy it with paratha, naan or rice.

Ingredients:

  1. Paneer – 300 grams (sliced)
  2. Onion – 1 Large (roughly chopped)
  3. Spinach – 1 cup (roughly chopped)
  4. Mint Leaves – 1 cup
  5. Coriander Leaves – 1 cup (roughly chopped)
  6. Ginger – 1 inch (roughly chopped)
  7. Garlic – 6 cloves 
  8. Green Chillies – 4 (roughly chopped)
  9. Curd (Yogurt) – 3/4 cup
  10. Cumin Seeds – 1 tsp
  11. Black Peppercorn – 1/2 tsp
  12. Black Cardamom – 1
  13. Green Cardamom – 2
  14. Cinnamon  Stick – 1/2
  15. Cloves – 2
  16. Whole Red Chilli – 2 
  17. Turmeric Powder – 1/2 tsp
  18. Kashmiri Red Chilli Powder – 1/2 tsp
  19. Coriander Powder – 1 tsp
  20. Crushed Kasuri Methi – 1 tsp
  21. Oil – 3 tbsp
  22. Salt to taste
  23. Water – 1/2 cup or as needed
  24. Red Chilli Ghee for garnishing.

PS: 1 Cup = 250 ML.

How to make Paneer Hyderabadi:

  1. Heat 1 tbsp oil in a pan. Add onion, garlic, ginger and green chillies. Saute until translucent
  2. Add spinach and cook until it shrinks
  3. Turn off the flame and add mint and coriander leaves. Mix well and let it cool
  4. Add to a blending jar and blend to a smooth paste, keep aside
  5. Heat 2 tbsp oil in a pan, and add black cardamom, green cardamom, cinnamon stick, black peppercorns, cloves and whole red chillies. Saute until fragrant
  6. Add cumin seeds and let it splutter
  7. Add the paste and cook until oil starts to separate
  8. Add curd and mix well. Stir continuously until it comes to a boil
  9. Add salt, turmeric powder, coriander powder, kashmiri red chilli powder and crushed kasuri methi. Mix well and cook for a min or two
  10. Add water as needed to have a desired consistency and bring it to a boil
  11. Add paneer and mix well, cook for 2-3 mins 
  12. Turn off the flame and your Paneer Hyderabadi is ready. Transfer it to a serving bowl and top it with some red chilli ghee. Relish with your favorite bread.
