It’s December and sharing today an easy recipe for shortbread cookies to relish or share with your family and friends, Orange Chocolate Shortbread Cookies.

Servings: makes around 20 medium size cookies.
Ingredients:
- All-Purpose Flour – 1 cup
- Salted Butter – 1/2 cup
- Granulated Sugar – 1/2 cup
- Orange Zest of a medium orange or about 1/2 tbsp
- Vanilla Extract – 1 tsp
- Dark Chocolate Chips – 1/2 cup
- Sea Salt or Orange Zest to sprinkle on top.
PS: 1 Cup = 250 ML.
How to make Orange Chocolate Shortbread Cookies:
- Take a grinding jar. Add orange zest and sugar, pulse a few times to make a fine orange-sugar, it will be moist. Keep aside
- Take a mixing bowl. Add butter and beat with a hand mixer or a whisk until creamy
- Add orange-sugar and vanilla extract. Beat until light and fluffy
- Add flour and mix until fully incorporated. You will get a little crumbly dough, take it out and bring it together with your hands to form a dough
- Now form a log from the dough, about 12 inches long. Wrap it in a plastic wrap and refrigerate until firm, at least 2 hours.
- Pre-heat the oven to 350 F. Line a baking sheet with the parchment paper and keep aside
- Take the log of dough and remove the plastic wrap. Slice it into 1/2 inch slices and place them on the baking sheet
- Bake the cookies for about 12 mins, or until the edges begin to turn golden
- Let the cookies cool for 10 mins on the baking sheet then place them on a wired rack to cool down completely
- While cookies cool, melt the chocolate. Add chocolate chips to a microwave safe bowl. Microwave until melted, stirring every 30 secs
- Once cookies are completely cooled, dip them into the chocolate, about 1/3 of the cookie. Place them on a lined baking sheet and let them dry completely
- Sprinkle some orange zest or sea salt on top and your Orange Chocolate Shortbread Cookies are ready!!!
