A healthy breakfast or a snack recipe, Corn Fritters!!! These are extremely easy to make and absolutely scrumptious.

Servings: makes 7-8 medium sized pancakes.
Ingredients:
- Boiled Sweet Corn – 2 cups
- Medium Onion – 1 (finely chopped)
- Garlic – 2 cloves (finely chopped)
- Ginger – 1 inch (finely chopped)
- Ginger Chillies – 2 (finely chopped)
- Coriander Leaves – 2 tbsp (finely chopped)
- Gram Flour – 1/4 cup
- Rice Flour – 2 tbsp
- Dried Oregano – 1 tsp
- Dried Basil – 1 tsp
- Chili Flakes – 1/2 tsp
- Ground Pepper – 1/4 tsp
- Salt to taste
- Oil to pan fry the fritters.
PS: 1 Cup = 250 ML.
How to make Corn Fritters:
- Take a blending jar and add 1 cup boiled sweet corn, blend to a coarse paste
- In a mixing bowl add the corn paste along with the remaining ingredients except the oil. Mix well to make the batter
- Heat a pan, brush it with some oil and spread the batter to make a medium sized fritter
- Cook on a medium flame until it turns golden brown, pour a few drops of oil and flip. Similarly cook the other side
- Your Corn Fritters are ready. Serve hot with some ketchup and green chutney!!!
