Corn Fritters | Pancakes

A healthy breakfast or a snack recipe, Corn Fritters!!! These are extremely easy to make and absolutely scrumptious.

Time: Preparation – 10 mins, Cooking – 15 mins, Total – 25 mins.

Servings: makes 7-8 medium sized pancakes.

Ingredients:

  1. Boiled Sweet Corn – 2 cups
  2. Medium Onion – 1 (finely chopped)
  3. Garlic – 2 cloves (finely chopped)
  4. Ginger – 1 inch (finely chopped)
  5. Ginger Chillies – 2 (finely chopped)
  6. Coriander Leaves – 2 tbsp (finely chopped)
  7. Gram Flour – 1/4 cup
  8. Rice Flour – 2 tbsp
  9. Dried Oregano – 1 tsp
  10. Dried Basil – 1 tsp
  11. Chili Flakes – 1/2 tsp
  12. Ground Pepper – 1/4 tsp
  13. Salt to taste
  14. Oil to pan fry the fritters.

PS: 1 Cup = 250 ML.

How to make Corn Fritters:

  1. Take a blending jar and add 1 cup boiled sweet corn, blend to a coarse paste
  2. In a mixing bowl add the corn paste along with the remaining ingredients except the oil. Mix well to make the batter
  3. Heat a pan, brush it with some oil and spread the batter to make a medium sized fritter
  4. Cook on a medium flame until it turns golden brown, pour a few drops of oil and flip. Similarly cook the other side
  5. Your Corn Fritters are ready. Serve hot with some ketchup and green chutney!!!
