Crispy, crunchy, tangy, healthy and delicious!!! This is what this salad is… Crispy Potato Salad. Do try and share it with your family and friends. You can even replace potato with sweet potato in this recipe if desired. I have air-fried the potatoes in this recipe and have shared more options below to prepare the crispy potatoes.

Ingredients:
- Boiled Potato – 1 large (peeled and chopped into cubes)
- Greek Yogurt – 1/2 cup
- Roasted Pistachios – 2 tbsp
- English Cucumber – 1 (chopped into small cubes)
- Onion – 2 tbsp (chopped into small cubes)
- Coriander Leaves – 2 tbsp (finely chopped)
- Garlic Powder – 1/4 tsp
- Ground Pepper – 1/4 tsp
- Chilli Flakes – 1/4 tsp
- Extra Virgin Olive Oil – 1 tbsp
- Lemon Juice – 1 tbsp
- Pomegranate Seeds as needed (optional)
- Sesame Seeds as needed (optional)
- Salt to taste.
PS: 1 Cup = 250 ML.
How to make Crispy Potato Salad:
- To prepare crispy potatoes:
- Air fry: Spray some oil in the air fryer and place the potatoes. Cook on 400 F for about 10 mins or until brown and crisp, shaking them twice in between
- Roast: Preheat the oven to 450 F and line a baking sheet with parchment paper. Roast for 30 mins or until brown and crisp. After 20 mins, use a spatula to stir them for even browning
- Deep Fry: Heat oil in a deep kadai or pan. Add potato cubes and deep fry from all the sides until brown. Drain on a kitchen paper towel to remove the excess oil
- Take a mixing bowl, add greek yogurt and whisk until smooth
- Add extra virgin olive oil, lemon juice, ground pepper, garlic powder, chilli flakes and salt. Mix well
- Add crispy potato, cucumber, onion, pistachios and coriander leaves. Mix well and your Crispy Potato Salad is ready
- Transfer it to a serving bowl or plate. Top it with some pomegranate seeds and sesame seeds. Enjoy!!!
