Dates Peanut Butter Oats Bites

These no bake, yummy and guilt free bites are made with just 5-6 ingredients. You’ll need dates, peanut butter, oats, chia seeds, shredded coconut and chocolate chips. Happy snacking!

Servings: makes about 15 bites.

Ingredients:

  1. Pitted Dates – 1 cup (soaked in warm water for 10 mins)
  2. Old Fashioned Oats – 1 cup
  3. Unsweetened Shredded Coconut – 1/2 cup + to sprinkle
  4. Peanut Butter – 1/2 cup
  5. Chia Seeds – 1 tbsp
  6. Chocolate Chips – 1/2 cup (dark or semi-sweet) 

PS: 1 Cup = 250 ML.

How to make Dates Peanut Butter Oats Bites:

  1. Soak dates in warm water for 10 mins, keep aside
  2. Add oats to a blender or a food processor and pulse to make a coarse powder, transfer to a bowl and keep aside
  3. Drain the water from dates and add them to a food processor or a blender along with peanut butter. Blend until smooth and sticky mixture, add 2-3 tbsp water if it’s difficult to blend
  4. Transfer the mix to a bowl, add ground oats, shredded coconut and chia seeds. Mix until combined well, you can even use your hands at this stage
  5. Roll into small balls, makes about 15 bites
  6. Add chocolate chips to a microwave safe bowl. Microwave until melted, stirring every 30 secs. Drizzle the melted chocolate over the balls and finally top it with some shredded coconut. Freeze for 10 mins so that the chocolate settles well
  7. Your Dates Peanut Butter Oats Bites are ready. Relish as a dessert or a snack or even in breakfast. Store in an air-tight container, they’ll remain good for upto a week over the counter, for two weeks in a fridge or freeze for longer storage
