Ingredients:
- Paneer (Indian Cottage Cheese) – 300 grams (grated)
- Yogurt – 1 cup (beaten)
- Gram Flour (Besan) – 2 tbsp
- Garlic – 3-4 cloves (finely chopped)
- Ginger – 1 inch (finely chopped)
- Green Chilli – 3-4 (finely chopped)
- Onion – 1 large (finely chopped)
- Tomato – 2 medium-large (finely chopped)
- Cumin Seeds – 1 tsp
- Kashmiri Red Chilli Powder – 1 tsp
- Turmeric Powder – 1/2 tsp
- Coriander Powder – 2 tsp
- Crushed Kasuri Methi (Dired Fenugreek Leaves) – 1 tsp
- Garam Masala Powder – 1 tsp
- Ghee (Clarified Butter) – 2 tbsp
- Water – 1/2 cup or as needed
- Salt to taste
- Chopped Coriander Leaves, Slit Green Chillies, Julienned Ginger for garnishing.
PS: 1 Cup = 250 ML.
How to make Amritsari Paneer Bhurji:
- Heat ghee in a pan or kadai. Add cumin seeds and let it splutter
- Add chopped green chilli, ginger and garlic. Saute until fragrant
- Add chopped onions and saute until onions are light golden brown
- Add gram flour, crushed kasuri methi, kashmiri red chilli powder, coriander powder and turmeric powder. Mix and cook on a low flame until fragrant, that’s about a min
- Add chopped tomatoes. Mix and cook on a medium flame until ghee starts to separate
- Add yogurt and mix well. Bring it to a boil and cook for a min
- Add water to achieve the desired consistency and bring it to a boil
- Add paneer and salt. Mix and cook for 2-3 mins
- Add garam masala powder. Mix and cook for a min
- Turn off the flame and add chopped coriander leaves. Mix and your Amritsari Paneer Bhurji is ready
- Transfer to a serving bowl. Top it with some chopped coriander leaves, julienned ginger and slit green chillies. Enjoy with your favorite bread!!!
