Paneer Bhurji Gravy is a semi gravy dish made with paneer (Indian cottage cheese). Paneer Bhurji is a well known Indian recipe as it’s delicious and a quick one to make, this recipe is quite different from that as we make a very palatable tomato paste for it, which is so rich in flavours. Enjoy it with Phulkas, Parathas, Whole Wheat Naan or Jeera Rice.

Ingredients:
- Paneer (Indian Cottage Cheese) – 200 grams (grated)
- Tomato – 2 large (roughly chopped)
- Ginger – 1 inch (roughly chopped)
- Garlic – 2 cloves (roughly chopped)
- Green Chilli – 2-3 (roughly chopped)
- Onion – 1 large (finely chopped)
- Black Cardamom – 1
- Bay Leaf – 1
- Cloves – 2
- Cumin Seeds – 1 tsp
- Coriander Powder – 1 tsp
- Red Chilli Powder – 1/2 tsp
- Cumin Powder – 1/2 tsp
- Kasuri Methi (Dried fenugreek leaves) – 2 tsp
- Garam Masala Powder – 1/2 tsp
- Oil – 4 tbsp
- Water – 3/4 – 1 cup
- Cream – 2 tbsp
- Coriander leaves to garnish
- Salt to taste.
How to make Paneer Bhurji Gravy:
- Heat 1 tbsp oil in a pan. Add black cardamom, cloves and bay leaf. Saute till aromatic
- Add chopped garlic, ginger and green chillies. Saute for a few seconds
- Add tomatoes and cook on medium flame till tomatoes are soft. Turn off the flame and let it cool down
- Now grind it to make a smooth paste. Strain it through a strainer by pressing it nicely to get the maximum gravy out of it, keep aside
- Heat 3 tbsp oil in a pan or a kadai. Add cumin seeds and let it splutter
- Add chopped onions and saute till golden brown
- Add tomato paste, coriander powder, red chilli powder and cumin powder. Mix and cook till oil starts to separate
- Add 3/4 cup water, you can add more as per desired consistency. Bring it to boil
- Add kasuri methi and cream. Mix well
- Add paneer, salt and garam masala powder. Mix and cook for 2-3 mins. Turn off the flame
- Add coriander leaves and mix. Your Paneer Bhurji Gravy is ready. Relish with phulka or paratha.
