Gur Makhana | Jaggery Foxnuts

Healthy and crunchy, a perfect snack to munch in this winter. You’ll just need a few ingredients to make these yummy bites!!!

Time: Preparation – 5 mins, Cooking – 15 mins, Total – 20 mins.

Servings: makes 2 cups.

Ingredients:

  1. Makhana (Foxnuts or Lotus Seeds) – 2 cups
  2. Chopped Jaggery or Jaggery Powder – 1/2 cup
  3. Sesame Seeds – 2 tbsp (optional)
  4. Ghee (Clarified Butter) – 1 tbsp
  5. Cardamom Powder – 1/4 tsp
  6. Water – 2 tbsp.

PS: 1 Cup = 250 ML.

How to make Gur Makhana:

  1. Heat a pan and add makhana. Dry roast on low-medium flame for about 10 mins, until crunchy and snaps easily. Remove from the pan and keep aside
  2. In the same pan add sesame seeds and dry roast for about 3-4 mins stirring continuously. Remove from the pan and keep aside
  3. In the same pan add jaggery and water. Mix and stir on low flame until jaggery melts completely. Keep cooking on low flame until it comes to a boil, then cook for about 5 mins while stirring continuously. Syrup will slightly thicken
  4. Check the consistency at this stage. Drop a few drops of syrup in a bowl of cold water, after a few secs remove it from the water and check if it has become brittle else boil for another min then check again. Repeat if necessary
  5. Once syrup is ready, remove it from the flame and add roasted sesame seeds, cardamom powder and ghee. Mix well
  6. Now add roasted makhana. Quickly mix to coat them nicely in the syrup
  7. Transfer it to a plate and let it cool down. Now break it apart with your hands into individual bites
  8. Your Gur Makhana is ready, store in an air-tight container and enjoy!
