Panjiri!!! It has the goodness of roasted nuts and ghee, absolutely flavourful and crunchy which makes it a perfect snack to enjoy in the winters.

Servings: yields about 2 cups.
Ingredients:
- Whole Wheat Flour – 1 cup
- Semolina – 1 tbsp
- Brown Sugar or White Sugar – 1/2 cup
- Almonds – 10
- Cashews – 10
- Pistachios – 10
- Shredded Coconut – 2 tbsp
- Foxnuts (Makhana or Lotus Seeds) – 2 tbsp
- Flaxseeds – 1 tbsp
- Ghee (Clarified Butter) – 5 tbsp + 2 tsp
- Cardamom – 2
- Edible Gum (Gond) – 2 tbsp
- Dry Ginger Powder – 1/2 tsp
- Crushed Rose Petals – 1/4 tsp.
PS: 1 Cup = 250 ML.
How to make Panjiri:
- Heat 1 tsp ghee in a pan. Add edible gum and roast on a medium flame until puffed, stir continuously. Remove from the pan and keep aside in a plate to cool down
- In the same pan, add foxnuts and roast until crisp. Remove from the pan and keep aside in the same plate with edible gum to cool down
- Heat 1 tsp ghee in the same pan. Add almonds, cashews, pistachios, coconut and flaxseeds, roast until slightly brown. Remove from the pan and keep aside in a separate plate to cool down
- Heat 5 tbsp ghee in the same pan. Add semolina and wheat flour, roast on a low-medium flame until raw smell goes away and it is slightly browned, will take around 10-15 mins. Remove from the pan and keep aside in a separate plate to cool down
- Once everything has cooled down, add foxnuts and edible gum to a food processor or grinding jar and grind to make make a coarse powder, remove and add it to the mixing bowl. Don’t over do it as coarse powder will taste better as it’ll have the crunch. You can also do it in a mortar-pestle
- Now add roasted nuts, coconut and flaxseeds along with cardamom seeds (remove the skin) to a food processor and blend to make a coarse powder, remove and add it to the same mixing bowl. Don’t over do it, you can also do it in a mortar-pestle
- Now add roasted flour, sugar, dry ginger powder and crushed rose petals to the same mixing bowl. Mix everything well and your Panjiri is ready. Enjoy!!!
