Bharwan Baigan / Stuffed Brinjal or Eggplant

This recipe is from my Mom’s kitchen. As I often say she’s the best cook and I always learn from her, this dish from her is famous in our family. Do try it!!!

Time: Preparation – 10 mins, Cooking – 20 mins, Total – 30 mins

Servings: 3-4


  1. Small Brinjal or Eggplant – 8
  2. Coriander Powder – 2 tsp
  3. Fennel Seed Powder – 2 tsp
  4. Turmeric Powder – 1 tsp
  5. Red Chilli Powder – 1 tsp
  6. Dry Mango Powder – 1 tsp
  7. Ghee – 1/3 tsp
  8. Mustard Oil – 2 tbsp
  9. Salt to taste

How to make Bharwan Baigan:

  1. Slit brinjals into two or four without breaking them. Keep aside
  2. Take a small bowl. Add spices – coriander powder, fennel seed powder, turmeric powder, red chilli powder, dry mango powder and salt. Add ghee (it will moist the mix). Mix well
  3. Now stuff the brinjals with the masala mix. Keep aside
  4. Heat mustard oil in a kadai or a pan. Let it smoke for a minute. Then turn the flame to medium and add a pinch of salt, it helps in removing the mustard oil aroma
  5. Add stuffed brinjals to the kadai or pan. Saute for 1-2 mins (so that all the brinjals are covered in oil)
  6. Cover and cook on low flame till brinjals are soft. Keep sauteing in between
  7. Your Bharwan Baigan is ready. Serve Hot!!!
