Dhokla is a Gujrati snack which is very popular all across India. Majorly served in the fast food restaurants. It is a quick and easy snack to prepare. It is made out of gram flour.

Servings: 3-4


  1. Gram Flour (Besan) – 1 cup
  2. Semolina (Sooji) – 1 tbsp
  3. Curd – 1/4 cup
  4. Lemon Juice – 1 1/2 tsp
  5. Eno Fruit Salt – 1 tsp (or Baking Soda – 1/4-1/3 tsp)
  6. Ginger-Green Chilli Paste – 1 tsp
  7. Green Chilli – 4 (slit lengthwise into halves)
  8. Black Mustard Seeds – 1/2 tsp
  9. Cumin Seeds – 1/2 tsp
  10. Sugar – 1 tbsp
  11. Coriander Leaves – 2 tbsp (finely chopped)
  12. Water – 1 to 1 1/4 cup
  13. Oil – 2 tbsp
  14. Salt to taste

PS: 1 Cup = 250 ML

  1. Grease the steamer pan or the vessel in which you’ll steam the dhokla with a few drops of oil. Keep aside
  2. Take a mixing bowl. Add gram flour (you can even sieve it to avoid lumps), semolina, ginger-green chilli paste, curd, lemon juice. Mix with a whisk or a spoon
  3. Add 3/4 cup water and salt. Mix well. There should be no lumps
  4. Meanwhile heat the steamer or the vessel with water in which you steam the dhokla
  5. Now add eno fruit salt. Whisk it in one direction for less than a minute. You’ll notice the size will almost double
  6. Immediately pour it in the steamer pan or vessel; and place it in the steamer or the vessel you’re using for steaming
  7. Steam for about 12-13 mins. Check with a knife if it’s cooked. If the knife comes out clean then it’s cooked, if not then steam for another 1-2 mins
  8. Take it out and let it cool down
  9. Now heat oil in a pan. Add mustard seeds and it splutter
  10. Add cumin seeds and green chillies. Saute for a few seconds
  11. Add 1/4 cup water and sugar. Bring to boil
  12. Pour the tempering evenly over the dhokla
  13. Cut dhokla into square shape
  14. Your Dhokla is ready. Garnish with coriander leaves and serve.
