Mini Tomato Tarts

Ingredients:

  1. Puff Pastry Sheet – 1
  2. Thinly Sliced Large Tomato – 1 or as needed
  3.  Sliced Onion – 1/2 or needed
  4. Pesto Sauce – about 2 tbsp or as needed, recipe here
  5. Shredded Mozzarella as needed
  6. Ground Pepper to taste
  7. Salt to taste
  8. Chopped Fresh Basil to sprinkle on top.

How to make Mini Tomato Tarts:

  1. Pre-heat the oven to 425 F. Line a baking sheet with parchment paper, keep aside
  2. Lightly flour the work surface, open the defrosted puff pastry sheet, dust it if needed, and using a rolling pin gently roll the sheet a little bit
  3. Slice the sheet using a pizza cutter or a knife into 9 equal parts, place the pieces on the baking sheet
  4. Spread some pesto, add some sliced onions, sprinkle some cheese, top it with a tomato slice and finally sprinkle some ground pepper and salt
  5. Bake for 15-20 mins or until golden brown
  6. Your Mini Tomato tarts are ready!!! Top with some chopped basil and cool for a few mins before serving, enjoy!
