Ingredients:
- Crumbled Paneer – 1 cup
- Soya Granules – 1/2 cup
- Boiled Peas – 1/2 cup
- Large Onion – 1 (finely chopped)
- Medium-Large Tomatoes – 2 (finely chopped)
- Green Chillies – 2-3 (finely chopped)
- Cumin Seeds – 1 tsp
- Coriander Powder – 2 tsp
- Kashmiri Red Chilli Powder – 1 tsp
- Turmeric Powder – 1/2 tsp
- Garam Masala Powder – 1 tsp
- Dried Fenugreek Leaves (Kasuri Methi) – 1 tsp
- Asafoetida – a pinch
- Ghee or Oil – 2 tbsp
- Fresh Cream – 2 tbsp (optional)
- Water to cook Soya Granules
- Salt to taste
- Finely Chopped Coriander Leaves to garnish
PS: 1 Cup = 250 ML.
How to make Soya Paneer Bhurji:
- Cook soya granules as per instruction on the pack and keep aside
- Heat ghee in a pan, add cumin seeds and asafoetida. Let it splutter
- Add finely chopped onions and cook until light golden brown
- Add coriander powder, turmeric powder and kashmiri red chilli powder. Mix and cook for a few seconds
- Add finely chopped tomatoes and green chillies. Cook until ghee starts to separate
- Add paneer, cooked soya granules, boiled peas and salt. Mix well and cook on medium flame for 3-5 mins. Stirring often
- Add garam masala powder, kasuri methi and cream. Mix well and cook for a min
- Turn off the flame and add chopped coriander leaves. Your Soya Paneer Bhurji is ready, enjoy with phukla or paratha.
