Soya Paneer Bhurji

Servings: 3-4

Ingredients:

  1. Crumbled Paneer – 1 cup
  2. Soya Granules – 1/2 cup
  3. Boiled Peas – 1/2 cup
  4. Large Onion – 1 (finely chopped)
  5. Medium-Large Tomatoes – 2 (finely chopped)
  6. Green Chillies – 2-3 (finely chopped)
  7. Cumin Seeds – 1 tsp
  8. Coriander Powder – 2 tsp
  9. Kashmiri Red Chilli Powder – 1 tsp
  10. Turmeric Powder – 1/2 tsp
  11. Garam Masala Powder – 1 tsp
  12. Dried Fenugreek Leaves (Kasuri Methi) – 1 tsp
  13. Asafoetida – a pinch
  14. Ghee or Oil – 2 tbsp
  15. Fresh Cream – 2 tbsp (optional)
  16. Water to cook Soya Granules
  17. Salt to taste
  18. Finely Chopped Coriander Leaves to garnish

PS: 1 Cup = 250 ML.

How to make Soya Paneer Bhurji:

  1. Cook soya granules as per instruction on the pack and keep aside
  2. Heat ghee in a pan, add cumin seeds and asafoetida. Let it splutter
  3. Add finely chopped onions and cook until light golden brown
  4. Add coriander powder, turmeric powder and kashmiri red chilli powder. Mix and cook for a few seconds
  5. Add finely chopped tomatoes and green chillies. Cook until ghee starts to separate
  6. Add paneer, cooked soya granules, boiled peas and salt. Mix well and cook on medium flame for 3-5 mins. Stirring often
  7. Add garam masala powder, kasuri methi and cream. Mix well and cook for a min
  8. Turn off the flame and add chopped coriander leaves. Your Soya Paneer Bhurji is ready, enjoy with phukla or paratha.
