Chickpea Quesadillas

Healthy Chickpea Quesadillas. The combination of chickpeas, cheese and sauteed veggies in a tortilla is super yum!

Ingredients:

  1. Boiled Chickpeas – 2 cups
  2. Tortilla – 4 (homemade or store-bought)
  3. Onion – 1 small (finely chopped) + 1 medium (sliced)
  4. Bell Pepper – 1 (sliced)
  5. Garlic – 1 clove (minced)
  6. Extra Virgin Olive Oil – 1 tbsp
  7. Lemon Juice – 1 tbsp
  8. Cumin Powder – 1/2 tsp
  9. Ground Black Pepper – 1 tsp
  10. Finely Chopped Coriander Leaves – 2 tbsp
  11. Shredded Mozzarella Cheese as needed
  12. Oil – 1 tsp
  13. Salt to taste
  14. Butter to toast 
  15. Yogurt Sauce to serve (follow recipe here)
  16. Green Chutney to serve (follow recipe here).

PS: 1 Cup = 250ML.

How to make Chickpea Quesadillas:

  1. Take a mixing bowl and add boiled chickpeas, mash them nicely. Add finely chopped onions, garlic, coriander leaves, extra virgin olive oil, lemon juice, cumin powder, 1/2 tsp ground black pepper and salt. Mix well and keep aside
  2. Heat oil in a pan. Add sliced onions, bell peppers, 1/2 tsp ground black pepper and salt. Saute until soft. Keep aside
  3. Now take a tortilla. Add the chickpea filling, top it with veggies and cheese. Fold in half
  4. Heat a panini press or grill pan. Spread some butter and place the quesadilla, cook from both sides until crisp
  5. Transfer it to a cutting board and cut in half. Your Chickpea Quesadilla is ready, enjoy with yogurt sauce or green chutney or both.
