How to make Kashmiri Dum Aloo:
- Choose from the following to fry the potatoes, I have used the air frying method
- Air Fry – Place the boiled and peeled potatoes in the basket of the air fryer and brush them with some oil. Cook on 400 F for 12-15 mins or golden brown
- Deep fry – Heat oil in a deep vessel and deep fry the potatoes until golden brown
- Take the fried potatoes and prick them with a tooth pick, keep aside
- Take a small bowl and add kashmiri mirch along with 4 tbsp of water. Mix and keep aside
- Heat mustard oil in a kadai or a pan, let it smoke for a min then turn the flame to low and add a pinch of salt, it helps in removing the mustard oil aroma
- Add black cardamom, green cardamom, cinnamon stick, clove, black peppercorn and bay leaf. Saute until fragrant
- Add cumin seeds and asafoetida. Let it splutter
- Turn the flame to low and add kashmiri mirch and water mix, stir well and cook until you get beautiful red color
- Add fennel seed powder and dry ginger powder. Mix and cook for a min on a medium flame
- Add water and salt, bring it to a boil
- Add boiled potatoes and stir well. Cook covered on a low-medium flame for 10 mins. Add water if needed
- Add garam masala powder and mix well
- Your Kashmiri Dum Aloo is ready, relish with some rice!
