Kashmiri Dum Aloo

Authentic Kashmiri Dum Aloo is a delicious recipe which is extremely easy to make, you will need baby potatoes and a handful of spices to make this. Enjoy it with phulka or rice.

Ingredients:

  1. Baby Potatoes – around 15 (boiled and peeled)
  2. Kashmiri Mirch – 2 tsp
  3. Fennel Seed Powder – 2 tsp
  4. Dry Ginger Powder – 1/2 tsp
  5. Black Cardamom – 1
  6. Green Cardamom – 2
  7. Bay Leaf – 1
  8. Clove – 2
  9. Black Peppercorns – 5-6
  10. Cinnamon Stick – 1/2
  11. Cumin Seeds – 1 tsp
  12. Mustard Oil – 4 tsp
  13. Asafoetida – a pinch
  14. Garam Masala Powder – 1/2 tsp
  15. Salt to taste
  16. Oil to fry the potatoes
  17. Water – 1 cup or as needed.

How to make Kashmiri Dum Aloo:

  1. Choose from the following to fry the potatoes, I have used the air frying method
    • Air Fry – Place the boiled and peeled potatoes in the basket of the air fryer and brush them with some oil. Cook on 400 F for 12-15 mins or golden brown
    • Deep fry – Heat oil in a deep vessel and deep fry the potatoes until golden brown
  2. Take the fried potatoes and prick them with a tooth pick, keep aside
  3. Take a small bowl and add kashmiri mirch along with 4 tbsp of water. Mix and keep aside
  4. Heat mustard oil in a kadai or a pan, let it smoke for a min then turn the flame to low and add a pinch of salt, it helps in removing the mustard oil aroma
  5. Add black cardamom, green cardamom, cinnamon stick, clove, black peppercorn and bay leaf. Saute until fragrant 
  6. Add cumin seeds and asafoetida. Let it splutter
  7. Turn the flame to low and add kashmiri mirch and water mix, stir well and cook until you get beautiful red color
  8. Add fennel seed powder and dry ginger powder. Mix and cook for a min on a medium flame
  9. Add water and salt, bring it to a boil
  10. Add boiled potatoes and stir well. Cook covered on a low-medium flame for 10 mins. Add water if needed
  11. Add garam masala powder and mix well
  12. Your Kashmiri Dum Aloo is ready, relish with some rice!
