A classic, easy to make and absolutely delicious recipe, Roasted Pepper Pasta.

Ingredients:
- Spaghetti Pasta – 225 grams or 8 oz
- Red Bell Pepper – 2
- Onion – 1 medium
- Garlic Cloves – 4
- Tomato – 2 medium (optional)
- Tomato paste – 1 tbsp
- Pasta Seasoning – 2 tsp
- Chili Flakes – 1/2 tsp
- Smoked Paprika – 2 tsp
- Ground Pepper – 1/2 tsp
- Dried Basil – 1 tsp
- Heavy Cream – 1/4 cup
- Olive Oil – 1 tbsp + brushing the veggies for roasting
- Salt to taste
- Sea Salt for brushing the veggies for roasting
- Water to cook the pasta.
PS: 1 Cup = 250 ML.
How to make Roasted Pepper Pasta:
- Pre-heat the oven to 425 F. Line a baking sheet with parchment paper. Keep aside
- Cut the bell peppers into 3-5 pieces, remove the top and seeds. Peel the onion and cut into 4 pieces. Cut tomatoes into halves
- Please the veggies upside down on the baking sheet along with the garlic cloves (keep the garlic peel on). Brush them with some olive oil and sea salt
- Bake for 35 mins. Once done remove from the oven and let them cool down
- Transfer the roasted veggies into a food processor. Blend to make a paste, keep aside
- Cook pasta as per the instructions on the pack
- While pasta is cooking heat 1 tbsp olive oil in a pan
- Add the paste and cook for 2-3 mins
- Add smoked paprika, ground pepper, pasta seasoning, chili flakes, dried basil, tomato paste and salt. Mix and cook for 4-5 mins
- Add 1/2 cup pasta cooking water and cook for 2 mins
- Add cream and mix well, and cook for a min
- Add boiled pasta and mix well. Your Roasted Pepper Pasta is ready, enjoy!!!
