Roasted Pepper Pasta

A classic, easy to make and absolutely delicious recipe, Roasted Pepper Pasta. 

Also try: Broccoli Pesto Pasta, Spaghetti Aglio E Olio, Lemon Pasta, Masala Macaroni or Makhani Pasta.

Ingredients:

  1. Spaghetti Pasta –  225 grams or 8 oz 
  2. Red Bell Pepper – 2
  3. Onion – 1 medium
  4. Garlic Cloves – 4
  5. Tomato – 2 medium (optional)
  6. Tomato paste – 1 tbsp
  7. Pasta Seasoning – 2 tsp
  8. Chili Flakes – 1/2 tsp
  9. Smoked Paprika – 2 tsp
  10. Ground Pepper – 1/2 tsp
  11. Dried Basil – 1 tsp
  12. Heavy Cream – 1/4 cup 
  13. Olive Oil – 1 tbsp + brushing the veggies for roasting 
  14. Salt to taste
  15. Sea Salt for brushing the veggies for roasting
  16. Water to cook the pasta.

PS: 1 Cup = 250 ML.

How to make Roasted Pepper Pasta:

  1. Pre-heat the oven to 425 F. Line a baking sheet with parchment paper. Keep aside
  2. Cut the bell peppers into 3-5 pieces, remove the top and seeds. Peel the onion and cut into 4 pieces. Cut tomatoes into halves
  3. Please the veggies upside down on the baking sheet along with the garlic cloves (keep the garlic peel on). Brush them with some olive oil and sea salt
  4. Bake for 35 mins. Once done remove from the oven and let them cool down
  5. Transfer the roasted veggies into a food processor. Blend to make a paste, keep aside
  6. Cook pasta as per the instructions on the pack
  7. While pasta is cooking heat 1 tbsp olive oil in a pan
  8. Add the paste and cook for 2-3 mins
  9. Add smoked paprika, ground pepper, pasta seasoning, chili flakes, dried basil, tomato paste and salt. Mix and cook for 4-5 mins
  10. Add 1/2 cup pasta cooking water and cook for 2 mins
  11. Add cream and mix well, and cook for a min
  12. Add boiled pasta and mix well. Your Roasted Pepper Pasta is ready, enjoy!!!
