Recently tried this Thecha Vermicelli and it was absolutely delicious. Added paneer for some protein and sesame seeds for some nuttiness, but these two are optional. For veggies added onions and capsicum, you can some carrots as well.

Ingredients:
- Roasted Vermicelli – 1 cup
- Paneer – 200 grams (chopped in small cubes)
- Green Chilli – 6 (roughly chopped) (adjust as per your taste)
- Roasted Peanuts – 1/4 cup
- Coriander Leaves – 1/2 cup + sprinkle on top
- Garlic Cloves – 6
- Onion – 1 medium (sliced)
- Capsicum – 1 medium (sliced)
- Ground Pepper – 1/2 tsp
- Sesame Seeds – 2 tsp
- Oil – 2 tbsp + 1 tsp
- Salt to taste
- Water to cook vermicelli.
PS: 1 Cup = 250 ML.
How to make Thecha Vermicelli:
- Heat 1 tsp oil in a pan. Add peanuts, garlic and green chillies. Saute until fragrant. Turn off the flame and add coriander leaves. Mix well.
- Transfer to a grinding jar. Grind on pulse to make a coarse paste. Your Thecha is ready, keep aside
- Boil water in the a saucepan, add salt and vermicelli. Cook until soft, drain in a colander and keep aside
- Heat 2 tbsp oil in a pan. Add onions and capsicum. Saute until translucent
- Add thecha and saute for 1-2 mins
- Add paneer, sesame seeds, ground pepper and salt. Cook for about 2 mins
- Add cooked vermicelli. Mix well and your Thecha Vermicelli is ready
- Sprinkle some coriander leaves and sesame seeds. Enjoy!
