Paneer Corn Dry

I simply love sweet corn and every time try to do an experiment with it. This time I mixed it with paneer (cottage cheese) as husband loves paneer… lol!!! I even added mint leaves which made it delectable.

Servings: 2-3

Ingredients:

  1. Paneer (Cottage Cheese) – 200 grams (cut in cubes)
  2. Sweet Corn – 1/2 cup (boiled)
  3. Onion – 1 medium (finely chopped)
  4. Green Chilli – 1 (finely chopped)
  5. Tomato – 2 medium (finely chopped)
  6. Mint Leaves – 3 tbsp (finely chopped)
  7. Cumin Seeds – 1 tsp
  8. Coriander Powder – 1 tsp
  9. Turmeric Powder – 1/3 tsp
  10. Red Chilli Powder – 1/4 tsp
  11. Garam Masala Powder – 1/3 tsp
  12. Black Pepper Powder – 1/4 tsp
  13. Cumin Powder – 1/2 tsp
  14. Fresh Cream – 1 tbsp (optional)
  15. Oil – 2-3 tbsp
  16. Salt to taste

PS: 1 Cup = 250 ML

How to make Paneer Corn Dry:

  1. Heat oil in a non-stick pan or a kadai
  2. Add cumin seeds and let it splutter
  3. Add onions. Saute
  4. Add green chillies and saute till onions are golden brown
  5. Add tomatoes and spices – coriander powder, red chilli powder, turmeric powder, garam masala powder, cumin powder and black pepper powder. Mix
  6. Cook till oil starts to separate
  7. Add cream and mix. Cook for a few seconds
  8. Add corn, paneer and salt. Mix well
  9. Cook for 2-3 mins on medium flame
  10. Turn off the flame and add mint leaves
  11. Your Paneer Corn Dry is ready. Serve Hot!!!
