These Raspberry Oatmeal Crumble Bars are healthy, yummy and absolutely easy to make. You’ll only need a few ingredients to prepare these. Relish them in breakfast or as a dessert, enjoy!
Tips:
- You can use store-bought raspberry jam instead if needed and skip the compote preparation steps below
- Whole wheat flour can be replaced with all-purpose or gluten-free flour, same goes for oatmeal
- Sugar can be used instead of maple syrup
- Regular butter can also be used in place of coconut oil
- These bars are mildly sweet, you can increase the maple syrup or sugar in the compote if needed
- Raspberry can be replaced with any other berry if desired.

Ingredients:
- Fresh or Frozen Raspberry – 2 cups
- Whole Wheat Flour – 1 cup
- Old Fashioned Oats – 1.5 cups
- Maple Syrup – 1/2 cup + 2 tbsp
- Coconut Oil – 1/2 cup
- Vanilla Extract – 1 tsp
- Baking Powder – 1/2 tsp
- Lemon Juice – 1 tsp
- A pinch of salt.
PS: 1 Cup = 250 ML
How to make Raspberry Oatmeal Crumble Bars:
- Heat a saucepan and add raspberries, 2 tbsp maple syrup, lemon juice & a pinch of salt. Mix and cook on medium-low flame until raspberries release the juice, stirring often
- Keep cooking on medium-low flame until it thickens, takes about 10 mins to reach the desired consistency of almost like a spread or a jam. It will thicken further as it cools, raspberry compote is ready, keep aside
- Pre-heat the oven to 360 F or 180 C. Line a 8×8 baking pan with parchment paper. Keep aside
- Take a mixing bowl and add whole wheat flour, oats, baking powder, coconut oil, maple syrup, vanilla extract & a pinch of salt. Mix well until combined
- Spread 2/3 of the crumble dough mix in the baking pan and press down evenly with a spatula. Bake for 10 mins
- Take it out of the oven and evenly spread the raspberry compote and finally top with the remaining 1/3 crumble dough mix
- Put it back in the oven and bake for about 35 mins or until golden
- Let it cool down at room temperature and then refrigerate for at least an hour or more, makes it easier to slice
- Now transfer it to a flat surface and cut into 9 or 16 equal pieces with a sharp knife
