Blueberry Puff Pastry Turnovers

An easy recipe with a few ingredients, Blueberry Puff Pastry Turnovers. A perfect treat for breakfast!!! It’s buttery and flaky filled with sweet and delicious blueberry filling.

Ingredients:

  1. Puff Pastry Sheet – 1
  2. Fresh Blueberries – 2 cups
  3. Sugar or Maple Syrup – 3 tbsp or as per taste
  4. Lemon Juice – 1/2 tsp
  5. Powdered Sugar – 1/2 cup
  6. Milk – 1 tbsp
  7. Vanilla Extract – 1/2 tsp
  8. A pinch of salt.

PS: 1 Cup = 250 ML.

How to make Blueberry Puff Pastry Turnovers:

  1. Add blueberries to a saucepan along with 2 tbsp sugar, lemon juice & salt
  2. Mix and cook on low-medium flame until berries release the juice, stirring often
  3. Keep cooking until thickens or you get a desired consistency, takes about 5-10 mins. It will thicken further as it cools, so keep that in mind. Blueberry filling is ready, keep aside
  4. Pre-heat the oven to 400F. Line a baking sheet with parchment paper, keep aside
  5. Lightly flour the work surface, open the defrosted puff pastry sheet, dust it if needed, and using a rolling pin gently press and roll the sheet to form a square
  6. Slice the sheet using a pizza cutter or a knife into 4 equal parts by cutting in half lengthwise and then cutting again across the middle
  7. Add about 2 tbsp of the blueberry filling in the centre of each pastry square
  8. Run a little water on your finger along the two edges of the pastry square, then fold one corner to the other diagonally, pressing lightly to seal. Brush with some water and sprinkle some sugar
  9. Bake for 18-20 mins or until golden brown
  10. Allow the turnovers to cool down
  11. Add powdered sugar, milk and vanilla extract in a small bowl. Whisk to combine well and drizzle it over the turnovers
  12. Your Blueberry Puff Pastry Turnovers are ready, enjoy!
