Soya Kebab Salad

Lets make Soya Kebab Salad which is highly nutritious, delicious and easy to make. You can prepare soya kebabs in advance for this salad.

Servings: Two salad bowls

Ingredients:

  • For Kebab:
    1. Soya Granules or Chunks – 1 cup
    2. Small Onion – 1 (finely chopped)
    3. Garlic – 4 cloves
    4. Ginger – 1/2 inch
    5. Green Chilli – 1-2
    6. Coriander Leaves – 1/4 cup (finely chopped)
    7. Gram Flour – 1/4 cup
    8. Ground Black Pepper – 1/2 tsp
    9. Cumin Powder – 1 tsp
    10. Garam Masala Powder – 1 tsp
    11. Chaat Masala Powder – 1 tsp
    12. Dry Mango Powder – 1/2 tsp
    13. Oil – 1 tbsp + for frying
    14. Salt to taste.
  • For Salad:
    1. Shredded Lettuce – 3 cups
    2. Sliced Cucumber – 1 
    3. Thinly Sliced Onion – 1 small
    4. Ground Black Pepper – 1/2 tsp
    5. Lemon to squeeze on top
    6. Green Chutney as needed (follow recipe here)
    7. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Soya Kebab Salad:

  1. Cook Soya Chunks or Granules as per instructions on the pack. Rinse thoroughly, drain all the water, squeeze the water nicely and keep aside
  2. Add ginger, garlic and green chilli to a grinding jar and grind to make a paste
  3. Add boiled chunks or granules into the same jar and grind to make a paste
  4. Transfer it to a mixing bowl, add chopped onions and coriander along with gram flour, garam masala powder, chaat masala powder, ground black pepper, cumin powder, dry mango powder and salt. Mix well
  5. Keep aside for 10 mins. Now make medium size kebabs from the mixture and keep aside
  6. Choose from the following to cook the kebabs, I have used the air frying method
    • Air Fry – Place the kebabs in the basket of the air fryer and brush them with some oil. Cook on 400 F for 12-15 mins or until golden and crisp
    • Pan Fry – Make flattened kebabs so that it is easy to cook. Heat some oil in a pan, place the kebabs, cook until crisp and brown
    • Deep fry – Heat oil in a deep vessel and deep fry the kebabs until golden brown
    • Bake – Make flattened kebabs so that it is easy to cook. Pre-heat the oven to 425 F or 220 F. Line a baking tray with parchment paper for easy cleanup. Place the kebabs on the baking tray and brush them with some oil. Bake for 15-18 mins or until golden-brown, flip them after 10 mins
  7. Your Soya Kebabs are ready, enjoy them as is with some green chutney or follow the salad recipe.
  8. Divide lettuce into two portions and add it to two bowls, top it with cucumber, onions, soya kebabs, green chutney, lemon, salt and pepper. Your Soya Kebab Salad is ready, enjoy!
