Lemon Quinoa

This recipe is effortless. We need quinoa, onions, garlic and lemon. The lemony flavor is unbeatable with quinoa. Hope you enjoy this one.

Time: Preparation – 5 mins, Cooking – 20 mins, Total – 25 mins

Servings: 1-2

Ingredients:

  1. Quinoa – 1/2 cup (rinsed)
  2. Onion – 1 medium (julienned)
  3. Garlic – 2 cloves (crushed or grated) (optional)
  4. Lemon Zest – 1 tbsp
  5. Cumin Powder – 1/2 tsp (optional)
  6. Turmeric Powder – 1/4 tsp
  7. Chilli Flakes – 1/2 tsp
  8. Lemon Juice – 1 tbsp
  9. Water – 1 cup
  10. Coriander Leaves – for garnishing
  11. Olive Oil – 2 tbsp
  12. Salt to taste.

PS: 1 Cup = 250 ML

  1. Add water and quinoa in a saucepan. Bring it to boil. Cover and cook on low flame till water is absorbed and quinoa is soft
  2. While quinoa is boiling heat oil in a pan. Add garlic. Saute
  3. Add onions. Saute till onions are crispy
  4. Add cumin powder, turmeric powder and chilli flakes. Mix
  5. Add lemon zest. Mix
  6. Add boiled quinoa and salt. Mix well and cook for 1-2 mins
  7. Turn off the flame. Add coriander leaves and lemon juice. Mix well
  8. Your Lemon Quinoa is ready. Serve Hot.
