Dhaba Style Dum Aloo

Try this lip-smacking Dhaba Style Dum Aloo recipe, it is high on flavours and easy to make. Relish with roti or paratha.

Tip: You can marinate potatoes and veggies for longer than an hour if you have time.

Ingredients:

  1. Baby Potato – 15-16 (boiled, peeled and pricked with a toothpick or a fork)
  2. Onion – 1 medium (chopped into cubes)
  3. Tomato – 1 large (chopped into cubes)
  4. Green Chilli-Ginger-Garlic Paste – 1 tbsp
  5. Yogurt (Curd) – 3/4 cup
  6. Gram Flour – 1 tbsp
  7. Coriander Powder – 2 tsp
  8. Kashmiri Red Chilli Powder – 2 tsp
  9. Turmeric Powder – 1/2 tsp
  10. Garam Masala Powder – 1 tsp
  11. Fennel Seed Powder – 1 tsp
  12. Cumin Powder – 1 tsp
  13. Crushed Kasuri Methi (Dried Fenugreek Leaves) – 1 tsp
  14. Bay Leaf – 1
  15. Dried Red Chilli – 2
  16. Coriander Seeds – 1 tsp
  17. Mustard Oil – 2 tbsp
  18. Salt to taste
  19. Water – 1 cup
  20. Coriander Leaves and Julienned Ginger to garnish.

PS: 1 Cup = 250 ML.

How to make Dhaba Style Dum Aloo:

  1. Take a mixing bowl and add yogurt, green chilli-ginger-garlic paste, gram flour, coriander powder, kashmiri red chilli powder, turmeric powder, garam masala powder, fennel seed powder, cumin powder, crushed kasuri methi, 1 tbsp mustard oil and salt. Mix well to make a nice marinade
  2. Add potatoes, onion and tomato. Mix and coat them well in the marinade. Marinate for an hour, you can keep longer if you have time
  3. Heat mustard oil in a kadai or a pan, let it smoke for a min then turn the flame to low and add a pinch of salt, it helps in removing the mustard oil aroma
  4. Add dried red chillies, coriander seeds and bay leaf. Saute until fragrant
  5. Add marinated potatoes and veggies. Mix well and cook on a medium flame for about 7-8 mins, stirring occasionally
  6. Add water and bring it to a boil. Turn the flame to low-medium and cook covered for about 15 mins. Gravy will thicken, keep stirring in between
  7. Your Dhaba Style Dum Aloo is ready, garnish with some coriander leaves and ginger, enjoy with roti or paratha!!!
