Mix Vegetable

I love Mix Vegetable as it’s full of veggies. You can even add veggies of your choice too.

Time: Preparation – 15 Mins, Cooking –  20 Mins, Total – 35 Mins

Ingredients:

  1. Cauliflower – 1 cup (coarsely chopped)
  2. Cabbage – 1 cup (finely chopped)
  3. Capsicum – 1/2 Cup (coarsely chopped)
  4. Potato – 1 medium size (coarsely chopped)
  5. Beans – 1/2 cup (chopped)
  6. Carrot – 1/2 cup (cut into rounds)
  7. Onion – 1/2 cup (finally chopped)
  8. Spring Onions – 1/2 cup (chopped)
  9. Green Chilli –  1 (finely chopped)
  10. Paneer – 1 cup (cut into cubes)
  11. Peas – 1/2 cup
  12. Sweet Corn – 1/2 cup (cooked)
  13. Oil – 2-3 tbsp (You can use Mustard or Olive Oil)
  14. Coriander Powder – 1 1/2 tsp
  15. Red Chilli Powder – 1/2 tsp
  16. Turmeric Powder – 1/2 tsp
  17. Chana Masala Powder – 1 tsp
  18. Garam Masala Powder – 1/2 tsp
  19. Ginger Garlic Paste – 1 tbsp
  20. Cumin Seeds (Jeera) – 1 tsp
  21. Asafoetida (Hing) – a pinch
  22. Salt to taste

PS: 1 Cup = 250 ML

How to make Mix vegetable:

  1. Heat oil in a pan or kadai. If you’re using mustard oil let it smoke for a minute. Then turn the flame to medium and add a pinch of salt, it helps in removing the mustard oil aroma
  2. Add cumin seeds and a pinch of asafoetida. Let it splutter
  3. Add ginger garlic paste. Saute for a few seconds
  4. Add onions and green chillies. Saute till onions are translucent
  5. Add cauliflower and cabbage. Saute for 2-3 mins
  6. Add potatoes, beans, peas and carrots
  7. Add spices –  coriander powder, red chilli powder, turmeric powder, garam masala powder, chana masala powder and salt. Mix well
  8. Cover the pan or kadai with the lid and cook on low flame
  9. Keep stirring the vegetables occasionally
  10. Once vegetables are cooked (you can check it by cutting the potato with the help of a spoon, if it cuts softly then it’s cooked) then add sweet corn, paneer and spring onions. Mix well
  11. Cook for another 2-3 mins in the open pan or kadai
  12. Your Mix Veg is ready to serve. Serve hot it with Phulka or Paratha.
