Lauki Kofta (Bottle Gourd Kofta)

Lauki is not everyone’s favorite. But when made koftas out of it, everyone loves it. A must try recipe.

Time: Preparation – 15 mins, Cooking – 30 mins, Total – 45 mins

Servings: 3-4

Ingredients:

For Kofta Pakora:

  1.  Bottle Gourd (Lauki) – 1 cup (grated)
  2. Onion – 1/2 cup (finely chopped)
  3. Green Chilli – 1 (finely chopped)
  4. Coriander leaves – 1 tbsp (finely chopped)
  5. Gram flour – 3 tbsp
  6. Coriander powder – 1 tsp
  7. Red Chill powder – 1/2 tsp
  8. Garam Masala powder – 1/2 tsp
  9. Oil – for frying
  10. Salt to taste

For Kofta Curry:

  1. Onion – 1 medium (puree)
  2. Garlic – 2 cloves (puree along with onions)
  3. Tomatoes – 2 medium (puree)
  4. Green Chilli – 1 (puree along with tomatoes)
  5. Ginger – 1 inch (puree along with tomatoes)
  6. Curd – 3 tbsp (whisked)
  7. Bay Leaf (Tej Patta) – 1
  8. Cumin seeds – 1 tsp
  9. Red Chilli powder – 1/2 tsp
  10. Turmeric powder – 1/2 tsp
  11. Coriander powder – 1 tsp
  12. Garam masala powder – 1/2 tsp
  13. Coriander leaves – 1 tbsp
  14. Water – 2 cups
  15. Olive oil – 2 tbsp (you can use refined oil or ghee as well)
  16. Salt to taste

PS: 1 Cup = 250 ML

How to make Kofta Pakora:

  1. Take a mixing bowl. Add grated bottle gourd, onions, green chillies, coriander leaves and gram flour. Mix well
  2. Add spices – red chilli powder, coriander powder, garam masala powder and salt. Mix well to make a paste
  3. Heat oil in a pan or a kadai. Drop the mix with the help of a small spoon in the oil
  4. Deep fry the pakora from all the sides
  5. Drain on a kitchen paper towel
  6. Your Kofta Pakoras are ready. Keep aside

How to make Kofta Curry:

  1. Heat oil in a pan or a kadai. Add bay leaf. Saute for a few seconds
  2. Add cumin seeds and let it splutter
  3. Add onion and garlic puree. Saute till golden brown
  4. Add tomato, green and ginger puree. Saute
  5. Add spices – red chilli powder, turmeric powder, coriander powder and garam masala powder. Cook till oil starts to separate. Keep sauteing in between
  6. Add whisked curd. Cook for 1-2 mins
  7. Add water and salt. Bring it to boil
  8. Add Kofta Pakoras. Cook for 5 mins on medium flame
  9. Your Lauki Kofta is ready. Garnish with coriander leaves
  10. Serve hot with Phulkas.
