Paneer with Quinoa makes a delectable recipe. A perfect one for lunch or dinner.

Ingredients:
- Quinoa – 1/2 cup
- Paneer (Indian Cottage Cheese) – 200 grams cup (cut into cubes)
- Onions – 1 medium (chopped)
- Capsicum – 1/2 cup (chopped)
- Tomatoes – 2 medium (chopped)
- Ginger – 1 inch (grated)
- Garlic – 2-3 cloves (grated)
- Green Chilli – 2-3 (chopped)
- Cumin Powder – 1/2 tsp
- Coriander Powder – 2 tsp
- Red Chilli Powder – 1/2 tsp
- Lemon Juice – 1 tbsp
- Olive Oil – 2 tbsp
- Water to cook quinoa
- Coriander Leaves for garnishing
- Salt to taste.
PS: 1 Cup = 250 ML.
How to make Paneer Quinoa:
- Cook quinoa as per the instruction on the pack
- Meanwhile heat oil in a pan. Add onions, capsicum, ginger and garlic. Cook till onions are translucent
- Add tomatoes, green chillies, coriander powder, cumin powder and red chilli powder. Mix and cook till tomatoes are soft
- Add paneer and salt. Mix and cook for 1-2 mins
- Add cooked quinoa. Mix and cook for a min
- Turn off the flame, add coriander leaves and lemon juice. Mix well and your Paneer Quinoa is ready.
