Sama Rice Pulao is a saatvik food recipe. To prepare this you’ll need sama rice (barnyard millet), paneer, potato, tomato, green chilli, a few spices and ghee (clarified butter). Enjoy this pulao with plain yogurt or Cucumber Tomato Raita and Green Chutney.

Ingredients:
- Sama Rice (Barnyard Millet) – 3/4 cup (soak for 10 mins)
- Paneer – 1/2 cup (chopped in cubes)
- Potato – 1 medium (peeled and chopped in small cubes)
- Tomato – 2 medium (finely chopped)
- Ginger – 1/2 inch (grated)
- Green Chili – 2 (finely chopped)
- Black Peppercorns – 4-5
- Cumin Seeds – 1 tsp
- Cumin Powder – 1/2 tsp
- Coriander Powder – 1 tsp
- Ground Black Pepper – 1/2 tsp
- Ghee (Clarified Butter) – 2 tbsp
- Lemon Juice – 1 tbsp (optional)
- Coriander Leaves to garnish
- Water – 3.5 cups
- Salt to taste.
PS: 1 Cup = 250 ML.
How to make Sama Rice Pulao:
- Thoroughly rinse the soaked rice and keep aside
- Heat ghee in a pressure cooker and add black peppercorns, let it splutter
- Add cumin seeds and let it splutter
- Add ginger and green chili. Saute till aromatic
- Add tomatoes, ground black pepper, coriander powder and cumin powder. Mix and cook until ghee starts to separate
- Add rice, potato, paneer, salt and water. Mix and close lid. Turn the flame to medium-high and cook for 3 whistles
- Turn off the flame and let the pressure settle down. Open the lid, add coriander leaves and lemon juice. Mix well and your Sama Rice Pulao is ready. Serve hot with curd (yogurt) or raita or chutney.

I find it interesting you use rock salt. I am guessing it isn’t the rock salt we use outside on our sidewalks to melt the ice and snow…lol

We generally use this salt in cooking fasting food. In Indian culture there are a few days when we do fasting 🙂
