Lauki Kuttu Cheela | Bottle Gourd Buckwheat Flour Savory Pancakes

During fasting days in India we make saatvik food and kuttu atta (buckwheat flour) plays an important role in these food preparations. We make pooris, kachoris or cheelas (savory pancakes) out of it, today’s recipe is a healthy one as we are using lauki (bottle gourd) which is very nutritious. We grate lauki and add it to kuttu atta along with water and a few spices to make a smooth batter, and finally make cheelas out if it. You can relish these cheelas as is with yogurt, chutney or with curries like Paneer Makhani, Jeera Aloo or Potato Curry.

Time: Preparation – 10 mins, Cooking – 15 mins, Total – 25 mins.

Servings: makes about 5 cheelas

Ingredients:

  1. Grated Lauki (Bottle Gourd) – 1 cup 
  2. Kuttu Atta (Buckwheat Flour) – 1/2 cup
  3. Finely Chopped Coriander Leaves – 2 tbsp 
  4. Finely Chopped Green Chilli – 1 
  5. Cumin Powder – 1/2 tsp
  6. Coriander Powder – 1 tsp (optional)
  7. Ground Black Pepper – 1/4 tsp
  8. Water – 1 cup
  9. Salt to taste
  10. Oil or Ghee (Clarified Butter) to pan fry the cheelas.

PS: 1 Cup = 250 ML.

How to make to Kuttu Cheela:

  1. Take a bowl. Add grated lauki, kuttu atta, cumin powder, coriander powder, ground black pepper, salt, green chili and coriander leaves. Mix
  2. Add water in portions and mix to make a medium consistency smooth batter. Keep aside for 5 mins
  3. Heat a non-stick pan. Pour a few drops of ghee and spread a ladle full of batter to form a circle. Cook until you get a few brown spots then flip and similarly cook the other side
  4. Your Lauki Kuttu Cheela is ready. Serve hot with curd (plain yogurt), chutney or your favorite curry.
