Aloo Shimla Mirch

An easy recipe for Aloo Shimla Mirch, to prepare it you’ll need boiled potatoes, onion, capsicum, tomatoes and a few spices. Enjoy it with paratha, dalrice or phulkas.

Servings: 2-3

Ingredients:

  1. Boiled Potato – 4 medium (peeled and chopped in cubes)
  2. Capsicum – 1 large (chopped in cubes)
  3. Onion – 1 medium (chopped in cubes)
  4. Tomato – 1 medium (chopped in cubes)
  5. Ginger – 1 inch (finely chopped)
  6. Cumin Seeds – 1 tsp
  7. Asafoetida – a large pinch
  8. Coriander Powder – 1 tsp
  9. Turmeric Powder – 1/3 tsp
  10. Red Chilli Powder – 1/2 tsp
  11. Garam Masala Powder – 1/4 tsp
  12. Mustard Oil – 2 tbsp (you can use any other oil as well)
  13. Coriander Leaves for garnishing
  14. Salt to taste.

How to make Aloo Shimla Mirch:

  1. Heat mustard oil in a kadai or a pan and let it smoke for a min, then turn the flame to medium and add a pinch of salt, it helps in removing the mustard oil aroma
  2. Add cumin seeds and asafoetida, let it splutter
  3. Add ginger and saute for a few seconds
  4. Add onions and capsicum, saute on medium flame until tender
  5. Add potatoes, turmeric powder, red chilli powder, coriander powder and salt. Mix well and saute for 3-4 mins 
  6. Add tomatoes and garam masala powder. Mix and cover, cook until tomatoes are tender
  7. Add coriander leaves and mix well. Your Aloo Shimla Mirch is ready.
