An easy recipe for Aloo Shimla Mirch, to prepare it you’ll need boiled potatoes, onion, capsicum, tomatoes and a few spices. Enjoy it with paratha, dal & rice or phulkas.

Ingredients:
- Boiled Potato – 4 medium (peeled and chopped in cubes)
- Capsicum – 1 large (chopped in cubes)
- Onion – 1 medium (chopped in cubes)
- Tomato – 1 medium (chopped in cubes)
- Ginger – 1 inch (finely chopped)
- Cumin Seeds – 1 tsp
- Asafoetida – a large pinch
- Coriander Powder – 1 tsp
- Turmeric Powder – 1/3 tsp
- Red Chilli Powder – 1/2 tsp
- Garam Masala Powder – 1/4 tsp
- Mustard Oil – 2 tbsp (you can use any other oil as well)
- Coriander Leaves for garnishing
- Salt to taste.
How to make Aloo Shimla Mirch:
- Heat mustard oil in a kadai or a pan and let it smoke for a min, then turn the flame to medium and add a pinch of salt, it helps in removing the mustard oil aroma
- Add cumin seeds and asafoetida, let it splutter
- Add ginger and saute for a few seconds
- Add onions and capsicum, saute on medium flame until tender
- Add potatoes, turmeric powder, red chilli powder, coriander powder and salt. Mix well and saute for 3-4 mins
- Add tomatoes and garam masala powder. Mix and cover, cook until tomatoes are tender
- Add coriander leaves and mix well. Your Aloo Shimla Mirch is ready.
