Aloo Pyaaz Sabji | Potato Onion Dry

The main ingredients of the recipe are in the name itself, Aloo (Potatoes) and Pyaaz (Onions). This is an easy recipe which goes well with dal, phuklas and rice.

  1. Potato – 2 medium-large (peeled and chopped into small cubes)
  2. Onion – 1 medium (sliced)
  3. Green Chilli – 1 (finely chopped)
  4. Cumin Seeds – 1 tsp
  5. Asafoetida – a large pinch
  6. Turmeric Powder – 1/4 tsp
  7. Red Chilli Powder – 1/2 tsp
  8. Coriander Powder – 1 tsp
  9. Garam Masala Powder – 1/2 tsp
  10. Mustard Oil – 2 tbsp (you can use any other oil as well)
  11. Coriander Leaves – for garnishing
  12. Salt to taste.

How to make Aloo Pyaaz Sabji:

  1. Heat mustard oil in a kadai or a pan. Let it smoke for a minute. Then turn the flame to medium and add a pinch of salt, it helps in removing the mustard oil aroma
  2. Add cumin seeds and asafoetida. Let it splutter
  3. Add onions and green chillies. Saute till translucent
  4. Add potatoes, turmeric powder, red chilli powder, coriander powder and salt. Mix
  5. Cover and cook on low flame till potatoes are soft
  6. Add garam masala powder and mix. Your Aloo Pyaaz Sabji is ready
  7. Garnish with coriander leaves and serve hot with Phulkas.
