Aloo Pyaaz Sabji

The main ingredients of the recipe are in the name itself, Aloo (Potatoes) and Pyaaz (Onions). This is an easy recipe which goes well with dal, phuklas and rice.

  1. Potato – 2 medium (peeled and chopped)
  2. Onion – 1 medium (julienned)
  3. Green Chilli – 1 (finely chopped)
  4. Cumin Seeds – 1 tsp
  5. Asafoetida a large pinch
  6. Turmeric Powder – 1/4 tsp
  7. Red Chilli Powder – 1/2 tsp
  8. Coriander Powder – 1 tsp
  9. Garam Masala Powder – 1/4 tsp
  10. Mustard Oil – 2 tbsp
  11. Coriander Leaves for garnishing
  12. Salt to taste.

How to make Aloo Pyaaz Sabji:

  1. Heat mustard oil in a kadai or a pan. Let it smoke then add a pinch of salt, it helps in removing the mustard oil aroma
  2. Add cumin seeds and asafoetida. Let it splutter
  3. Add onions and green chillies. Saute till translucent
  4. Add potatoes, turmeric powder, red chilli powder, coriander powder and salt. Mix and cook covered on low flame until potatoes are soft
  5. Add garam masala powder and coriander leaves, mix well and your Aloo Pyaaz Sabji is ready.
