Aloo Palak | Potatoes Spinach Dry

Spinach is such a nutritious green vegetable, I love using it in many of my recipes. Aloo Palak is a dry dish prepared with potatoes, spinach, onions, tomatoes and a few spices.

  1. Palak (Spinach) – 150 grams (cleaned and chopped)
  2. Potato – 2 medium-large (peeled and chopped into small cubes)
  3. Onion – 1 small (finely chopped)
  4. Tomato – 1 medium-large (finely chopped)
  5. Green Chilli – 2 (finely chopped)
  6. Cumin Seeds – 1 tsp
  7. Coriander Powder – 1 tsp
  8. Garam Masala Powder – 1/2 tsp
  9. Turmeric Powder – 1/4 tsp
  10. Red Chilli Powder – 1/2 tsp (optional)
  11. Mustard Oil – 2 tbsp (you can use any other oil as well)
  12. Salt to taste.

How to make Aloo Palak:

  1. Heat mustard oil in a kadai or a pan. Let it smoke for a minute. Then turn the flame to medium and add a pinch of salt, it helps in removing the mustard oil aroma
  2. Add cumin seeds and let it splutter
  3. Add onions and green chillies. Cook till onions are translucent
  4. Add potatoes, coriander powder, red chilli powder and turmeric powder. Mix
  5. Cover and cook on low flame till potatoes are 90% cooked. Stir occasionally
  6. Add chopped palak and tomatoes. Mix
  7. Cover and cook for 4-5 mins on low flame. Potatoes will also be completely cooked by then
  8. Uncover and cook for 2-3 mins on medium-high flame so that excess water from palak is absorbed
  9. Add garam masala powder. Mix well
  10. Your Aloo Palak is ready. Serve hot with phulkas or parathas.
