Aloo Palak

I love green vegetables and always keep trying new dishes with them. Aloo Palak is a healthy option too. Give it a try.

  1. Spinach (palak) – 150 grams (cleaned and chopped)
  2. Potato – 1 large (chopped)
  3. Onion – 1 small (finely chopped)
  4. Tomato – 1 medium (finely chopped)
  5. Green Chilli – 1 (finely chopped)
  6. Ginger Garlic Paste – 1 tsp
  7. Cumin Seeds – 1/2 tsp
  8. Asafoetida – 1/5 tsp (optional)
  9. Coriander Powder – 1 tsp
  10. Garam Masala Powder – 1/3 tsp
  11. Turmeric Powder – 1/3 tsp
  12. Red Chilli Powder – 1/4 tsp (optional)
  13. Mustard Oil – 2 tbsp (you can use any other oil as well)
  14. Salt to taste

How to make Aloo Palak:

  1. Heat mustard oil in a kadai or a pan. Let it smoke for a minute. Then turn the flame to medium and add a pinch of salt, it helps in removing the mustard oil aroma
  2. Add cumin seeds and asafoetida. Let it splutter
  3. Add ginger garlic paste. Saute for a few seconds
  4. Add onions and green chillies. Cook till onions are translucent
  5. Add potatoes and spices – coriander powder, red chilli powder, turmeric powder and garam masala powder. Mix well
  6. Cover and cook on low flame till potatoes are 90% cooked. Stir occasionally
  7. Add chopped palak and tomatoes. Mix well
  8. Cover and cook for 4-5 mins on low flame. Potatoes will also be cooked completely by then
  9. Uncover and cook for 2-3 mins on medium flame so that excess water from palak is absorbed
  10. Turn off the flame and your Aloo Palak is ready
  11. Serve hot with phulkas or parathas.
