Crispy potatoes in a delicious spinach gravy, Aloo Palak Gravy! Relish with your favorite bread or jeera rice.
Tips:
- I have air-fried the potatoes, you can also deep-fry if desired
- You can use Saag Gravy as well in this recipe, in the last step just replace spinach paste with saag. It tastes equally great.

Ingredients:
- Spinach – about 300 grams
- Parboiled Potato – 3 medium
- Onion – 1 medium-large (finely chopped)
- Tomatoes – 2 medium (finely chopped)
- Green Chilli – 2-3 (finely chopped)
- Ginger – 1 inch (finely chopped)
- Garlic – 3 cloves (finely chopped)
- Dried Red Chilli – 2
- Bay Leaf – 1
- Black Cardamom – 1
- Cumin Seeds – 1 tsp
- Red Chilli Powder – 1/2 tsp
- Turmeric Powder – 1/2 tsp
- Garam Masala Powder – 1 tsp
- Coriander Powder – 1 tsp
- Dried Fenugreek Leaves (Kasuri Methi) – 1 tsp
- Ghee – 2 tbsp
- Water – 1 cup or as needed
- Salt to taste.
PS: 1 Cup = 250 ML.
How to make Aloo Palak Gravy:
- Add spinach and 1/4 cup water to a pressure cooker, close the lid and cook for one whistle on high flame. Turn off the flame, release the pressure and let it cool down. Now transfer it to a blending jar and blend to a smooth paste. Keep aside
- Cut parboiled potatoes into one inch cubes
- Spray some oil in air fryer and place the potatoes. Cook on 400 F for about 15 mins or until golden and crisp. Keep aside
- Heat ghee in a pan or a kadai. Add dried red chillies, bay leaf and black cardamom. Saute until fragrant
- Add cumin seed and let it splutter
- Add onions, ginger and garlic. Saute until golden brown
- Add tomatoes and green chilli. Saute until ghee starts to separate
- Add red chilli powder, turmeric powder and coriander powder. Mix and cook for a min
- Add fried potatoes and salt, mix well and cook for about 2 mins
- Add spinach paste, dried fenugreek leaves, garam masala powder and water as needed for desired consistency. Mix well and cook for 3-4 mins. Your Aloo Palak Gravy is ready, enjoy with your favorite bread or rice.
