Aloo Palak Gravy

Crispy potatoes in a delicious spinach gravy, Aloo Palak Gravy! Relish with your favorite bread or jeera rice.

Tips:

  1. I have air-fried the potatoes, you can also deep-fry if desired
  2. You can use Saag Gravy as well in this recipe, in the last step just replace spinach paste with saag. It tastes equally great.

Ingredients:

  1. Spinach – about 300 grams
  2. Parboiled Potato – 3 medium
  3. Onion – 1 medium-large (finely chopped)
  4. Tomatoes – 2 medium (finely chopped)
  5. Green Chilli – 2-3 (finely chopped)
  6. Ginger – 1 inch (finely chopped)
  7. Garlic – 3 cloves (finely chopped)
  8. Dried Red Chilli – 2
  9. Bay Leaf – 1
  10. Black Cardamom – 1
  11. Cumin Seeds – 1 tsp
  12. Red Chilli Powder – 1/2 tsp
  13. Turmeric Powder – 1/2 tsp
  14. Garam Masala Powder – 1 tsp
  15. Coriander Powder – 1 tsp
  16. Dried Fenugreek Leaves (Kasuri Methi) – 1 tsp
  17. Ghee – 2 tbsp  
  18. Water – 1 cup or as needed
  19. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Aloo Palak Gravy:

  1. Add spinach and 1/4 cup water to a pressure cooker, close the lid and cook for one whistle on high flame. Turn off the flame, release the pressure and let it cool down. Now transfer it to a blending jar and blend to a smooth paste. Keep aside
  2. Cut parboiled potatoes into one inch cubes
  3. Spray some oil in air fryer and place the potatoes. Cook on 400 F for about 15 mins or until golden and crisp. Keep aside
  4. Heat ghee in a pan or a kadai. Add dried red chillies, bay leaf and black cardamom. Saute until fragrant
  5. Add cumin seed and let it splutter
  6. Add onions, ginger and garlic. Saute until golden brown
  7. Add tomatoes and green chilli. Saute until ghee starts to separate
  8. Add red chilli powder, turmeric powder and coriander powder. Mix and cook for a min
  9. Add fried potatoes and salt, mix well and cook for about 2 mins
  10. Add spinach paste, dried fenugreek leaves, garam masala powder and water as needed for desired consistency. Mix well and cook for 3-4 mins. Your Aloo Palak Gravy is ready, enjoy with your favorite bread or rice.
