Paneer Quinoa

Paneer with Quinoa makes a delectable recipe. A perfect one for lunch or dinner.

Ingredients:

  1. Quinoa – 1/2 cup
  2. Paneer (Indian Cottage Cheese) – 200 grams cup (cut into cubes)
  3. Onions – 1 medium (chopped)
  4. Capsicum – 1/2 cup (chopped)
  5. Tomatoes – 2 medium (chopped)
  6. Ginger – 1 inch (grated)
  7. Garlic – 2-3 cloves (grated)
  8. Green Chilli – 2-3 (chopped)
  9. Cumin Powder – 1/2 tsp
  10. Coriander Powder – 2 tsp
  11. Red Chilli Powder – 1/2 tsp
  12. Lemon Juice – 1 tbsp
  13. Olive Oil – 2 tbsp
  14. Water to cook quinoa
  15. Coriander Leaves for garnishing
  16. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Paneer Quinoa:

  1. Cook quinoa as per the instruction on the pack
  2. Meanwhile heat oil in a pan. Add onions, capsicum, ginger and garlic. Cook till onions are translucent
  3. Add tomatoes, green chillies, coriander powder, cumin powder and red chilli powder. Mix and cook till tomatoes are soft
  4. Add paneer and salt. Mix and cook for 1-2 mins
  5. Add cooked quinoa. Mix and cook for a min
  6. Turn off the flame, add coriander leaves and lemon juice. Mix well and your Paneer Quinoa is ready.
