Mexican Quinoa

Mexican Quinoa is a healthy and an appetising meal, and it’s effortless to make.

Time: Preparation – 5 mins, Cooking – 25 mins, Total – 30 mins.

Servings: 3-4

Ingredients:

  1. Quinoa – 1 cup
  2. Cooked Beans – 1.5 cups (or a 15 oz can, drained and rinsed)
  3. Boiled Sweet Corn – 1 cup
  4. Finely Chopped Garlic – 2-3 cloves
  5. Chopped Onion – 1 medium
  6. Chopped Bell Peppers – 1 cup
  7. Chopped Tomato – 1 large
  8. Finely Chopped Coriander Leaves – 2 tbsp
  9. Finely Chopped Jalapeño as per taste 
  10. Lime or Lemon Juice – 2 tbsp
  11. Cumin Powder – 1 tsp
  12. Red Chilli Powder (or Paprika) – 1/2 tsp
  13. Oil – 2 tbsp
  14. Water to cook quinoa
  15. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Mexican Quinoa:

  1. Cook quinoa as per the instructions on the pack
  2. Meanwhile heat oil in a pan. Add garlic and saute until aromatic
  3. Add onions and bell peppers. Saute until tender
  4. Add cumin powder, red chilli powder, boiled sweet corn, cooked beans, jalapeño and tomatoes. Mix and saute for about two mins
  5. Add cooked quinoa and salt. Mix well and cook for another two mins
  6. Turn off the flame and add lime juice & coriander leaves. Mix well and your Mexican Quinoa is ready.
