I am in love with these Smashed Chickpea Sandwiches, these are guilt-free and super delicious! You’ll need a handful of ingredients to prepare these healthy, crispy and flavourful sandwiches.

Servings: makes 3 sandwiches.
Ingredients:
- Sourdough (or bread of your choice) – 6 slices
- Boiled Chickpeas – 2 cups
- Finely Chopped Onions – 1/4 cup
- Minced Garlic – 1 clove
- Extra Virgin Olive Oil – 1 tbsp
- Lemon Juice – 1 tbsp
- Cumin Powder – 1/2 tsp
- Ground Black Pepper – 1/2 tsp
- Finely Chopped Coriander Leaves – 2 tbsp
- Salt to taste

- Butter or Oil to toast the sandwiches.
PS: 1 Cup = 250 ML.
How to make Smashed Chickpea Sandwiches:
- Take a mixing bowl and add boiled chickpeas. Mash them nicely
- Add onions, garlic, coriander leaves, extra virgin olive oil, lemon juice, cumin powder, ground black pepper and garlic. Mix well, your stuffing is ready
- Take bread slices, spread some chutney, then spread the stuffing and place the other slice on top of it to make the sandwich
- Meanwhile heat a pan, grill pan or sandwich maker
- Spread some butter and place the sandwich, toast from both the sides with butter until crisp
- Your Smashed Chickpea Sandwiches are ready, enjoy!
