Smashed Chickpea Sandwich

I am in love with these Smashed Chickpea Sandwiches, these are guilt-free and super delicious! You’ll need a handful of ingredients to prepare these healthy, crispy and flavourful sandwiches.

Servings: makes 3 sandwiches.

Ingredients:

  1. Sourdough (or bread of your choice) – 6 slices
  2. Boiled Chickpeas – 2 cups
  3. Finely Chopped Onions – 1/4 cup
  4. Minced Garlic – 1 clove
  5. Extra Virgin Olive Oil – 1 tbsp
  6. Lemon Juice – 1 tbsp
  7. Cumin Powder – 1/2 tsp
  8. Ground Black Pepper – 1/2 tsp
  9. Finely Chopped Coriander Leaves – 2 tbsp
  10. Salt to taste

  12. Butter or Oil to toast the sandwiches.

PS: 1 Cup = 250 ML.

How to make Smashed Chickpea Sandwiches:

  1. Take a mixing bowl and add boiled chickpeas. Mash them nicely 
  2. Add onions, garlic, coriander leaves, extra virgin olive oil, lemon juice, cumin powder, ground black pepper and garlic. Mix well, your stuffing is ready
  3. Take bread slices, spread some chutney, then spread the stuffing and place the other slice on top of it to make the sandwich
  4. Meanwhile heat a pan, grill pan or sandwich maker
  5. Spread some butter and place the sandwich, toast from both the sides with butter until crisp
  6. Your Smashed Chickpea Sandwiches are ready, enjoy!
