Sama Rice Kheer

I would say it’s a late post as this dessert is generally enjoyed during the fast or navratri. Sama or Samak or Samvat or Vrat Rice is usually used to make dessert or pulao on the day of fasting. This time I am sharing the recipe of kheer and this is equally luscious as normal rice kheer. An easy recipe.

Course: Dessert

Cuisine: North Indian

Servings: 3-4

Time: Preparation – 5 Mins, Cooking –  35 Mins, Total – 40 Mins

  1. Milk –  1 litre (Whole or Full Milk)
  2. Sama Rice – 3 tbsp
  3. Sugar – 6 tbsp or as required
  4. Almonds – 6
  5. Cashews – 6
  6. Raisins – 1/8 Cup
  7. Cardamom – 2

PS: 1 Cup = 250 ML

How to make Kheer:

  1. Soak rinsed rice in water for 20 mins
  2. Soak raisins in water for 20 mins
  3. Meanwhile heat milk in a thick bottom pan and bring it to boil
  4. Reduce the flame to low and add rice
  5. Stir occasionally and let it cook on low flame for 20-25 mins
  6. Keep scraping the sides of the pan and add it to the milk
  7. Meanwhile in a mortar-pestle crush almonds and cashews. Keep it aside
  8. Now take cardamoms in the mortar-pestle and make a fine powder. Remove the peel and keep the powdered cardamom aside
  9. Add crushed nuts, raisins and cardamom powder and cook for another 5 mins (or till you get the required thickness)
  10. Once you reach the required thickness switch off the flame. Add sugar and stir
  11. Your Sama Rice Kheer is ready to be served. Serve hot or cold
  12. Top it with crushed nuts while serving.
