Peppers and Onions Pesto Pasta

A flavourful pasta with pesto, onions and bell peppers. A quick and easy recipe.

Ingredients:

  1. Shell Pasta – 1 cup (you can use any other shape as well)
  2. Pesto Sauce – 2 tbsp (recipe here)
  3. Onion – 1 medium (julienned)
  4. Bell Pepper – 1/2 cup (julienned)
  5. Chilli Flakes – 1 tsp 
  6. Ground Black Pepper – 1/4 tsp
  7. Oil – 2 tbsp
  8. Water to cook pasta
  9. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Peppers and Onions Pesto Pasta:

  1. Cook pasta as per instructions on pack
  2. While pasta is cooking take a small bowl. Add pesto sauce and 2 tbsp of pasta cooking water, mix well and keep aside. This will help in diluting the sauce
  3. Now heat oil in a pan. Add onions and bell peppers. Cook till tender
  4. Add diluted pesto sauce, chilli flakes, ground black pepper and salt. Mix well
  5. Strain pasta and add it to the pan. Toss well until pasta is coated in the sauce
  6. Your Peppers and Onions Pesto Pasta is ready.
