Oatmeal Raisin Cookie

This is the 200th recipe on my blog. So happy to have shared these many recipes till now. Since it’s a special day then recipe has to be a sweet one, so “Oatmeal Raisin Cookies” it is. When I started this blog in December 2016 never thought I’ll be sharing recipes on baking and it feels great to have come this far. Thanks to all who have tried or praised the recipes shared by me. These cookies are loaded with oats and raisins. They are soft and chewy. Recipe is easy and has no eggs. They have become my favorite after Chocolate Chip Oatmeal Cookies

You can make it gluten-free by replacing whole wheat flour with ground rolled oats.

Freshly baked cookies taste the best, but they’ll remain good for 2-3 days in an airtight container or freeze them for a longer storage.

If you like butter in your cookies, then replace oil with butter.

Time: Preparation – 10 mins, Freezing – 30 mins, Baking – 15 mins, Total – 55 mins

Servings: makes around 15 medium size cookies

Ingredients:

  1. Whole Wheat Flour – 1/2 cup
  2. Rolled Oats – 1 cup
  3. Honey or Maple Syrup – 1/3 cup
  4. Olive Oil – 1/4 cup (you can use coconut oil or butter as well)
  5. Baking Powder – 1/2 tsp
  6. Baking Soda – 1 tsp
  7. Vanilla Extract – 1 tsp
  8. Raisin – 1/4 cup (or 1/3 cup if you like more raisins)
  9. Salt – 1/2 tsp.

PS: 1 Cup = 250 ML.

How to make Oatmeal Raisin Cookie:

  1. Take a mixing bowl. Add whole wheat flour, rolled oats, baking powder, baking soda and salt. Mix them with a whisk. Add raisins. Toss and keep aside the flour mix
  2. In another big mixing bowl. Add oil (or butter), maple syrup (or honey) and vanilla extract. Whisk until mixture is smooth
  3. Now add flour mix to the wet ingredients. Stir with a spoon and mix until all ingredients are combined and no flour is visible
  4. Freeze the dough for 30 – 45 mins. You can also chill them for 24 hours in the refrigerator
  5. When you’re ready to bake, pre-heat the oven to 325 degrees fahrenheit or 165 degrees celsius
  6. Line baking sheet/tray with parchment paper for easy cleanup and saving the cookies from burning up
  7. Spoon the mixture into even 2-inch rounds and place the dough onto the sheets. Similarly do it with remaining dough, leaving 1-2 inches of space around each cookie
  8. Bake until the edges are starting to turn golden, it takes around 12 to 15 mins
  9. Your Oatmeal Raisin Cookies are ready. Enjoy.

      Thank you for highlighting the missing butter quantity. Actually in the final recipe I replaced butter with oil and completely forgot to edit the recipe and it got published. I have made the corrections now.
