Sweet Corn Quinoa

Quinoa and sweet corn make a dainty combination. A healthy and tasty meal to relish!!!

Time: Preparation – 5 mins, Cooking – 20 mins, Total – 25 mins.

Servings: 1-2

Ingredients:

  1. Quinoa – 1/2 cup
  2. Boiled Sweet Corn – 1/2 cup
  3. Onion – 1 medium (finely chopped)
  4. Tomato – 1 large (finely chopped)
  5. Ginger – 1 inch (grated)
  6. Garlic – 1 clove (grated)
  7. Green Chilli – 1 (finely chopped)
  8. Cumin Seeds – 1/2 tsp
  9. Coriander Powder – 1 tsp
  10. Lemon Juice – 1 tbsp
  11. Water – 1 cup
  12. Coriander Leaves for garnishing
  13. Olive Oil – 2 tbsp
  14. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Sweet Corn Quinoa:

  1. Thoroughly rinse the quinoa and add to a saucepan along with the water. Bring it to boil, then turn the flame to low and cover. Cook until water is absorbed and quinoa is soft
  2. Meanwhile heat oil in a pan. Add cumin seeds and let it splutter
  3. Add onions, ginger, garlic and green chilli. Saute till onions are golden brown
  4. Add tomatoes and coriander powder. Cook till oil starts to separate
  5. Add boiled sweet corn, cooked quinoa and salt. Mix well and cook for about 2 mins
  6. Turn off the flame. Add coriander leaves and lemon juice. Mix well
  7. Your Sweet Corn Quinoa is ready. Serve Hot.
