Veg Fried Rice

Indo-Chinese food is a popular fast food in India, this recipe is for Indo-Chinese vegetable rice. To prepare this we stir fry the vegetables then add vinegar and soy sauce, and finally toss the rice in it. It is flavorful and super easy to make.

Time: Preparation – 10 mins, Cooking – 15 mins, Total – 25 mins.

Servings: 2-3

Ingredients:

  1. Cooked Rice – 3 cups
  2. Boiled Green Peas – 1/4 cup
  3. Green Beans – 1/4 cup (finely chopped)
  4. Capsicum – 1/4 cup (finely chopped)
  5. Carrot – 1/4 cup (finely chopped)
  6. Cabbage – 1/4 cup (finely chopped)
  7. Spring Onion – 1/3 cup (chopped, separate the whites and greens)
  8. Grated Garlic – 2 tsp
  9. Grated Ginger – 1 tsp
  10. Soy Sauce – 1.5 tbsp
  11. Vinegar – 1 tbsp
  12. Ground Black Pepper – 1/2 tsp
  13. Oil – 4 tbsp
  14. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Veg Fried Rice:

  1. Heat oil in a pan or a wok. Add grated ginger and garlic. Saute till aromatic
  2. Keep high flame and add spring onion whites, saute for a few seconds
  3. Add green beans and cook for about a min
  4. Add cabbage, capsicum and carrots. Stir fry for 1-2 mins
  5. Add boiled green peas, spring onion greens and soy sauce. Mix and cook for 1-2 mins
  6. Add cooked rice, vinegar, ground black pepper and salt. Mix nicely and cook for 1-2 mins
  7. Your Veg Fried Rice is ready. Serve hot!!!
