Paneer Spinach Sandwich

The stuffing for these scrumptious sandwiches is made with paneer (Indian cottage cheese), spinach,  sweet corn and cheese. An easy recipe.

Servings: makes 4 sandwiches

Ingredients:

  1. Paneer (Indian cottage cheese) – 150 grams (crumbled)
  2. Spinach – 150 grams (blanched and chopped)
  3. Boiled Sweet Corn – 1/2 cup
  4. Bread Slices – 8
  5. Garlic – 1 clove (finely chopped)
  6. Ground Black Pepper – 1/4 tsp
  7. Chili Flakes – 1/4 tsp
  8. Shredded Mozzarella Cheese – as needed
  9. Oil – 1 tsp
  10. Butter to toast the sandwiches
  11. Salt to taste.

PS: 1 Cup = 250 ML.

How to make Paneer Spinach Sandwich:

  1. Heat oil in a pan. Add finely chopped garlic and saute until aromatic
  2. Add blanched and chopped spinach, saute for a min
  3. Add crumbled paneer, boiled sweet corn, ground black pepper, chili flakes and salt. Mix and cook for 3-4 mins. Stuffing is ready
  4. Take bread slice, spread the stuffing, sprinkle some cheese and finally top it with the other bread slice
  5. Meanwhile heat a pan, grill pan or a sandwich maker
  6. Spread some butter and place the sandwich, toast from both the sides until crisp
  7. Your Paneer Spinach Sandwich is ready.
